What's for Dinner #123 - the Start of the End of the Year Edition - November 2025

Chill Sunday @casa lingua — I decided to catch up on some reading while my dood watched a few sportsing games.

He joined me for what we thought would be “just a quick run” to Wegner’s for a nice variety of shrooms for tonight’s dinner: maitake specifically plus oyster shrooms, as both Asian grocers we stopped in on the way didn’t have any. Despite it being Ssspicy Sssunday, we felt like a break from hot food — I know, hard to believe! — and I had shroom pasta on my mind :drooling_face:

Wegners no longer carries maitake :enraged_face:, and the oyster shrooms were $$$. After a stop at TJ’s we finally lucked out at the Giant…. which happens to be the supermarket closest to us and would’ve saved us a LOT of driving had we gone there first :roll_eyes:

While down that way we also picked up fresh local heavy cream & a dozen local eggs for my boo’s Biscoff ice cream and orange almond cake for :turkey: day.

The sauce came out MAHvelous, if I may say so. I started the sauce with rendering a thick slice of bacon in a bit of olive oil, then sautéing ½ a shallot and crushed garlic in the rendered fat, saving the crispy bacon bits to be added later, a teeny shake of RPF (can’t go cold turkey after all hahaha) & dried thyme. The maitake & oyster shrooms were sautéed in the bacon fat & olive oil and deglazed with a splash of open red. To add more body to the sauce I also added a tiny bit of BTB mushroom, and some of TJ’s fire-roasted tomatoes I still had in the fridge from the Jamie Oliver Disaster Ragù. Reconstituted shiitakes went in for MOAR shroominess. What can I say — Ima fun gal :wink:

Finished it all with a touch o’ cream & fresh parsley and served over fettuccine with grated Parm Reg. Nice Primitivo to drank with :wine_glass:

Salad was mixed greens with new-to-me tomatoes in a creamy herb mustard vinaigrette.

Speaking of salad — someone dropped a bagged Caesar salad kit in the Wegners parking lot, and we didn’t see anyone looking for it…. so we took it home, as fate clearly wanted us to have it. Having never bought a salad kit in my life, I’m curious to see what it’s like. We have yet to try CK’s Caesar dressing, so the stars are clearly aligning for us. Might have it with our cheeborger meal Tuesday in lieu of fries.
