Chicken breast baked with olive oil and Penzeys Tuscan Sunset.

Melissa Clark’s Creamy Corn Pasta with Basil, and steamed green beans.

There was wine.

I made a batch of chicken chile verde to feed us for the week. I used some frozen Hatch chiles and serrano chiles in base, with a large white onion, a head of garlic, and 3/4 of a pound of tomatillos.

My PIC offered to make Peruvian chicken with aji verde for us tonight so I wouldn’t be bothered with cooking. When he tried to use our brand-new Cuisinart to make the sauce, the latch didn’t quite line up, so it was impossible to use. Guess we’re taking that back to Mallwart when we get a chance :roll_eyes: The small one had to do, and the aji verde came out wonderfully :yum:

Band practice went very well & was a nice distraction. We grabbed a couple of HH Kölsch at the beer garden & some of the spiciest potato chips I’ve had

before heading back home to prepare dinner. My plan to make SE’s extra crispy potatoes was postponed to tomorrow, so my only contribution was a mixed salad with sunny crisp lettuce, romaine, FM tomatoes, cuke, avocado & celery in TJ’s & Aldi’s buttermilk ranch dressing.

The chicken quarters and BLSO thighs came out fabulously in the air fryer — juicy meat & crispy skin, and nobody really missed the potatoes.

My boo picked up one of his favorite root beer brands & had a bottle with our meal. I had the tiniest taste and — no, it did not change my mind at all about root beer. Hard no forever :nauseated_face: He loves it, and that’s all that matters.

One quarter chicken and salad is leftover, which will be perfect for my post-workout lunch tomorrow.

I’ll roast the two bags of hot hatch green chile peppers I picked up yesterday tomorrow for future use :blush:

Egg and tuna salad on a toasted brioche bun. Gussied up carrot cake box mix with grated carrot and pineapple. Also store bought cream cheese frosting topped with homemade mandarin marmalade.

Quickie tacos with sweet potato fries, seasoned black beans, cauliflower rice roasted with soy chorizo, avocado, Greek yogurt, cilantro, and Scotch bonnet sauce.


Banana chocolate chip bread and a decaf latte for dessert.

A nice BC king salmon filet baked with a chile crisp, honey, and mayo glaze. Served with cukes in an Asian-inspired vinaigrette and steamed rice.

Seared and roasted biso chicken thigh with red chimichurri, haricots verts, bacon and shallots. Little gem and mixed greens salad, red onion, cucumber, Gold Nuggets, @roxlet’s Green Goddess dressing. A G&T and Wine with.

It’s been quite the meat fest lately for me - BLTs (three this week!), a rib eye we split at my sister’s last night…

…with corn on the cob, red chimichurri, and a sliver of my sister’s tortilla de patata.

…and tonight, i made us giant American wagyu-style beef burgers - a whole 1/2 pound each. Not exactly burgers, as i didn’t want to buy buns, so olive-oil-grilled sourdough for me, butter-grilled white sandwich bread for the BF, mild cheddar for both. Tomato & lettuce on mine for health. :stuck_out_tongue:

They were on the rare side, super beefy, tender, and juicy AF! Also, the BF made an olive oil potato salad with kalamata olives and a little sweet relish. Tasty, but there was just no way. I put mine back.

I’d say i’m eating nothing but tofu and salads this week, but… i bought more bacon. :smiley:
