What's for Dinner #121 - the End of Vacation/Start of School Shopping Month Edition - August 2025

Exactly the sort of indicator I’m looking for.

Pasta, braises, soups, stews, even foccacia or pizza (being mindful of the juiciness) are all uses that I can foresee for future me. Thank you for sharing!

I hadn’t seen the original post from 2022; just went and printed it out. What with all of the lovely local tomatoes coming into the farm stands around us, this is a great way to have that roasted tomato flavor in the middle of the winter. Thanks @MunchkinRedux and @tomatotomato!

I got it from @mariacarmen, so all thanks to her. :+1:

Correct! No one was interested in eating them with me. Next time I will!

Turns out this puffball was too far gone to spore inside to eat. A few days earlier, maybe! I’ll keep an eye on my neighbor’s driveway.

Crispy tilapia fillets Puttanesca with leftover ww spaghetti and buttered broccoli. Still not a big fan of this fish, although I like it OK in Asian restaurant preparations.

We used to ‘forage’ the giant ones (basketball size!) near Priest Lake, Idaho.

Not sure what I’ll do tonight, I made some primo, homemade chicken stock from a Costco roti the other day and picked over the meat this morning. The roomate is away for 36 hours. The stock is for a red pepper bisque I’ve been hankering for. I’ll probably scour the freezer in the garage for a small treasure and use the chix meat in something tomorrow. The energy level and inspo is dropping by the minute. I need a nap.
I think Thursday’s dinner will be a bite of ‘fair food’ I’ll share with the roomate. A huckleberry funnel cake might pass through these lips, too. Or maybe a bite of a chocolate covered frozen banana. One fair item we used to get bitd was a half pita filled with sliced roast beef, tomato, lettuce and a drizzle of ranch dressing. Easy walking dinner. Can’t do that this year, I’m walking with a cane.

Healthy bowl with salad with chili-lime vinaigrette and warm-spiced roasted butternut squash, hot honey crispy tempeh, crispy chickpeas, crispy shallots, tahini-lime yogurt sauce, jalapeño slices, and avocado (added post photo). A kind of riff on Ottolenghi. Very tasty! TN’s cornflake Belgian milk chocolate bar for dessert.

Gonna be fridge clean-out meals until Wednesday. Spring Onion has finally started to take charge of his own meals. Tonight was breakfast for dinner—he made 2 sunny-side eggs and a TJ’s mochi bubble pancake-waffle thing-y. The dregs of a jar of Carbone marinara sauce/farmstand green bell, habanero, and jalapeño pepper/white onion/last of an opened can of black beans/TJ’s soy ground beef over cellentani. Shredded Mexican cheese for B’s dish (pictured; he told me to take this photo because he would add an unsightly amount more).

My honey came home for work and asked for a hot turkey sandwich for dinner. Ask and you shall receive. I had a turkey club bunwich and kale chips I made earlier. I didn’t realize kale was the only lettuce on the house, so my sandwich didn’t get any. Drumsticks for dessert. Down to 9 days before work starts again…. I’m not ready. I will be eating, drinking and consuming edibles until next Monday. Only plus side is football season starts! Going out with some peeps to do our fantasy teams tomorrow.

After our PT session this AM we started in on one of several minor home improvement projects we’d been pushing off, but now that the beginning of the semester looms it’s time to get real.

A fresh coat of paint on the kitchen floorboards, windowsill & corner cabinet was long due, but with our monkey boy around we’d been nervous about having paint near the floor. With our house now being a pet-less one for the foreseeable future, we’re working towardsrenting it out through airbnb. The floorboards in our entrance way are next, as are the walls. We’ll get to that tomorrow, hopefully, or decluttering our living rooms shelves. Lots n lots to do.

While my PIC did the painting, I cleaned the kitchen windows on both sides, then partook in perhaps the only cleaning activity I genuinely enjoy: power-washing the outside of the house , and with a bouncy playlist from our big bash a few years back it was even more fun! :dancer:t2:

We rewarded ourselves by scooting over to a brewery and meeting up with a buddy for a refreshing, late afternoon Key Lime Kölsch.

Dinner was a low-key affair of air-fried salmon filets lubed up with luscious ladolemono and a Greek salad. The extra-crispy potatoes à la Kenji had to wait for another day since we got home so late. Oh, and a few of TJ’s gigantes as our app.

I wonder if I could do this with some black cherry tomatoes. The skin is thinner than grape-ish tomatoes and they are much more watery.

We fried them up a couple times, when we found them in the forest, but I realised I don’t really like the taste.

I tried frying some pink oyster mushrooms from the farmers’ market last week, and they were terrible.

I am just sticking to the 5 Mushrooms I know well from now on. Chanterelle/ Pfifferlinge, King Oyster, white, cremini and Shiitake.
LOL
I don’t like Hen of the Woods or Chicken of the Woods fwiw, either. LOL.
