My Mom did the same, boiled whole with peels on, then drained and peeled, then dressed. Best potato salad ever! She only used mayo though, but I like it with both.
Set up the Induction Burner out back and fried some Pork and Shrimp Spring Rolls that I made a while back and Froze. Also some Nước mắm pha for dipping with Mint and Lettuce for wrapping.

Double cheeseburger on a toasted sourdough bun(my new favorite burger bun) with tomato, pickle, red onion, mustard and catsup. The side of leftover pasta salad was totally unnecessary and I barley touched it… Mooo

Tried out the new grill. Lamb kofte from the posh butcher, Campari tomatoes and Vidalia onion wedges, sugar snap peas. Eyes bigger than stomach - apart from the snap peas, more than half of everything else left over. Maybe to go in a bean salad tomorrow.
Realized I hadn’t made my usual “start of the summer meal”…probably because of the lousy weather we’d had in my area since March.
So tonight was chicken satay with zucchini, red bell peppers, and onions with my Dad’s satay sauce, served on Basmati rice.
There were strawberry V&L(s) as the libation.
And after a trip to Marathon Sports, and trying on Hoka Clinton 9s, Hoka Bondi 8s, and Brooks Ghost Max 2s (in that order), I took 4 steps in the Brooks and knew these were the new kicks. They still look weird (to me) with the massive sole, but if they work to ease the pain that Arthur has caused, I’ll deal.
I looked at their Oofos for slides or sandals for inside wear. Nope. Dislike. Will check out Archies online if I can’t find them locally.
Those shoes are lovely! And they look very comfortable.
Homemade meatballs and sauce. I usually toss the raw meatballs in a large pot of sauce to cook. But since it was just the two of us i took out a smaller container of sauce from the freezer and fried the meatballs in olive oil. Served over lightly buttered ricotta/mozzarella stuffed ravioli from the frozen food dept. Garlic cheesy toast. Salad for him.

Today felt like I was running a care unit. Our monkey is still poorly, although a few things made me happy: he briefly ventured out into the front living room & walked around to look out the window, and he had a couple of licks of half & half I poured into a soy sauce dish in my desperation to get some calories into him, but that’s obviously not enough.
I got up at a more acceptable hour & did some laundry, while my PIC just kept snoozing. He woke up around 11:30 am (unusual for him, and unusual for jet-lag in this direction), feeling weak and having tummy aches. No fever, so I got him some cold water I replenished occasionally, but he basically slept all day.
I briefly left the house to meet one of my gal pals for another Cajun shrimp taco lunch, but then kept an eye on my two sick boys. My boo just wanted a bowl of TJ’s creamy tomato soup for dinner, and I made myself a small choriatiki. It was delicoius, but now I’m crampy and wish I’d had soup instead
Now I want meatballs. Do you have a go-to on ingredients?

Tried making a low sodium Asian inspired pork, veg, and potsticker soup to scratch an itch for Asian food. Didn’t work.

A riff on NYT Cauliflower Piccata. I added chunks of blsl chicken thigh (instead of chickpeas) which were sauteed in butter and oo before adding the other ingredients. Asparagus with butter, tomato caprese with burrata. Parsley was added when it was discovered on the cutting board. There was a Negroni and wine with.

In my mind, that’s a perfect recipe! No worries, whenever you can put it all together is fine. I tend to be a meat sauce person, but when I see meatballs, I always think “Now why don’t I do that next time?”
