Yes, Neighbor #2’s doctor put her on a new medication and she is having some difficulties adjusting to it. Her doctor believes this is temporary and she’ll be able to tolerate it after this “adjustment period”.

I’ll check on her and I am planning on taking her some homemade soup tomorrow.

She called me this morning and told me the Ground Turkey & Veggie fried rice was great, I think she was just very hungry.

Chupe with shrimp, halibut and local fingerlings tonight.

I used this recipe as inspiration.

I omitted the green peas, red bell pepper, and cayenne pepper.

I used some leftover drained Rotel tomatoes, instead of tomato paste. I cooked the potatoes 15 minutes before adding the halibut. I simmered the halibut about 10 minutes until it registered 130 on the thermometer, then I added the shrimp.

I cut the kernels off the corn cobs before adding them to the soup around the time I added the shrimp.

I added cilantro when I added the cream near the end, once halibut had reached 145 degrees F.

Grilled salmon and zucchini. I was looking for something different and came across a recipe for salmon grilled with a mixture of mayo, honey and fish sauce. The combo of the fat in the mayo and the sugar in the honey allows the fish to char quickly. The fish sauce adds a needed savory note. It worked very well.

My carbolicious 4th of July meal. Cheddar & jalapeno sausage on a toasted brioche bun, Dejon & whole grain mustards, pickle relish & onion. Orzo salad, cucumber, red onion, red bell, celery, kalamata olives, oo&v dressing. Ranch beans from a can. Kettle Farmstead Ranch chips. Galliano rocks as a digestif.

Chicken burgers with ground chicken, minced scallions, chopped parsley, cumin, red pepper flakes, and s&p. I had planned to add avo to the burger, but the organic avocados I purchased on sale were total carp – black on the inside. Chucked them and skipped that. Kroger oughtta be ashamed for selling that stuff (even if it is on sale), and I should know better than to buy it (especially when it is on sale). Tillamook cheddar. For a barrier, I used leftover caramelized-onion-and-bacon-dip.

Carrot slaw on the side.

That prep sounds great.

The BF and I were supposed to collab on a Bolivian dinner today, but he wasn’t feeling up to it, so i went on to plan B. Made pulled pork using a shoulder with a rub, slow-cooked in the oven for 3 hours, then finished for another hour with a homemade bbq sauce. In hindsight, should have drained the pork juices and fat before i added the sauce to the meat, but it was still really tasty and SO TENDER. quickled a persian cuke in apple cider vinegar and sugar. Toasted brioche buns. Gave Rancho Gordo King City Pink beans a similar treatment using the same rub & a little of the bbq sauce, and added a drizzle of maple syrup, then simmered for 4 hours. And COTC! Cuz it’s summertime! I also made a batch of hummus and jammy boiled eggs for the week.

We’ll have out Bolivian fest on Sunday.

I didn’t make a separate stock.

My shrimp came with shrimp tails. I removed the shrimp tails when I was sauteeing the onions. I wrapped the tails in cheesecloth, and added them to the pot when I added the potatoes and water.

I pulled out the shrimp tails and cheesecloth just before putting the chupe on the table.

It turned out really well and so simple. Next time I think I may use hot honey to give it a touch of heat. I bet maple syrup would work.

We enjoyed a nice semi alfresco dinner on the deck (appetizers outside and main course inside because it got too hot). We started off with homemade guac and baked figs topped with blue cheese, pine nuts, and reduced balsamic. It went great with an espresso martini. For the main course we enjoyed Dungeness crabs (from Costco) and TJ’s sweet potato fries. It went great with an excellent cabernet. I’m also including a couple of gratuitous photos.

When we look for restaurants on vacations we try not to hit those which are overly touristy but obviously many of them still cater to tourist, e.g. English menu available etc. And so it was a nice change when we went to Tempo https://restaurantetempo.pt/ in Braga which is located outside of the town center in a more residential area, only Portugese menus and we seemed to be the only non-Portuguese in the restaurant. The food was an interesting mix of some fusion-inspired dishes as appetizers and very good Portuguese “classics” as entrees (octopus in Portugal is fantastic everywhere but this one was particularly great) which had a more “rustic” feeling than at other restaurants before - only kind of “downside” were the portion sizes which were huge (even for US standard) and so there were a lot of food we had to leave at the restaurant.

I woke up at 6 AM yesterday, worrying about our baby boy. After giving him lots of cuddles on his favorite blanket, I started unpacking and getting organized. We had some shopping to do & were surprised what a zoo Wegmans was. Probz visitors for our uh-MAZing fireworks display and other festivities, or maybe just last-minute purchases for backyard 'cues :woman_shrugging:t2:

Our friends had invited us to a low-key cookout on their patio with G&Ts, deviled eggs (natch!), guac & chips, cheeborgerz & fries, and we contributed German brats from Wegmans we promptly forgot at home & I had to retrieve, plus I’d made a simple coleslaw.

When the mosquitos got a lil too aggressive we moved inside, where their hellion cat had already found her spot ON the table :face_with_hand_over_mouth: :laughing:

Jet-lag hit us hard & we left around 9:45, incidentally the time when the fireworks start. My dude had absolutely zero interest in driving to our “secret” viewing spot, but I love love love them and so we just parked on the side of the road en route home and watched them from the car. Mighty purtty :star_struck: — regardless of the occasion.

Came home to a slightly more upbeat kitty: he scratched his scratching tray for the first time since we got back, and I was able to convince him to get up on the couch to lie on his favorite pillow. A small success :crossed_fingers:t2:

Celebrated the 4th with Old Fashioned Potato Salad. My aunt, raised in Mississippi, always added the mayo-mustard mixture while the potatoes were freshly drained and hot so I did same + a little rice vinegar, red onion, celery, Cornichons, HB eggs. I used russets, well rinsed.
