Leftover cheeseburger omelet. What? An omelet made from a leftover cheeseburger, or the leftovers from a cheeseburger omelet? Both! On Sunday, I chopped up a leftover cheeseburger, without the bun, and made an omelet from it. I didn’t finish it on Sunday, and I had the leftover cheeseburger omelet for dinner. With fries, and a little weed before I composed this post. Wow, man!

I found some leftover soup in the freezer, but it wasn’t labeled. It turned out to be a Chicken Cabbage soup. It didn’t look like quite enough for two people, so I made some braided bread rolls (for dunking in the soup). In the end, it was a good meal that filled us up.

I had intended on having spaghettini with bok choy for dinner tonight but I only got three small bok choys in my CSA last Thursday so I tossed them all in the fish curry I made last Sunday and I had already finished up all the other veggies called for in that dish anyway. So for dinner tonight I made a pasta puttanesca and asparagus instead.

Love Bindae-tteok! Those look great.
It is so versatile as well, you can add almost anything to the Batter.

We had a fab small lunch of spicy dumplings at our favorite Thai food truck at the weekly market en route to the Centro Italia branch that is ever-so-slightly closer to where we are staying this summer, but still a 20 min scoot on my Vespa :astonished:.

We’re already missing Italy & stocked up on a few Sicilian wines, Sicilian tomatoes, hot chili peppers in oil, marinated grilled zukes and peppers, a wonderfully creamy Bergamino di capra, a slab of Raschera, fennel salami, burrata, pistachio mortadella, stracciatella, pistachio pesto — the last 3 items in the hopes of recreating that fabulous sammich we had in Ortigia for our lunch tomorrow, and to look at the ginormous selection of Italian groceries.

Dinner was an easy but delightful Abendbrot with our favorite sourdough, assorted salumi e formaggi, the marinated veg, and a Greek-ish salad on the side with Sicilian tomatoes, local cukes, Greek feta, red shallots dressed with olive oil, s&p, and oregano.

Thanks! Yeah pretty easy to make too. I think maybe the copius amount of oil used may reduce the healthiness :smile:

I adapted this recipe for skillet Chicken Divan to use what I had on hand: Gouda, Parm Regg, and Pecorino for the cheese, mascarpone for the cream cheese, 2% milk, and buttered cracker crumbs for the panko. I added minced onion, garlic, crimini mushrooms, fresh thyme, mushroom and chicken BTB, TJ’s umami powder, and white vermouth to the sauce. And I cooked the casserole covered in the oven rather than strictly stovetop. Served over cauli-quinoa blend. The adults liked it :slight_smile: Green beans with adjika and lemon oo as the side.

Leftovers galore!
Chow Main/chilli chicken and garlic green beans from yesterdays lunch and a couple of Asian-y glazed chicken thighs. Heat n eat, my kind of dinner!

Got delivery of some apps and sides from our favorite local Mexican place. I constructed tacos from their grilled octopus, charred serranos, refried beans, and house made tortillas. Pinot Grigio to go with. Very satisfying!
