We enjoyed an excellent dinner at newly opened Greek restaurant, Meltemi, in Ridgewood, NJ, outstanding whole crispy calamari; pastitsio (a little dry); whole grilled branzino; fasolakia; spanakopita; eggplant chips; and baklava. It all went great with an excellent red blend and cabernet.

Risotto with asparagus, shrimp, and mushrooms and tarragon from the balcony. Slightly worried about the mushrooms, but so far, so good.

I made Viet-inspired lemongrass chicken meatball soup: ground chicken mixed with crumbled tofu, minced lemongrass, cilantro, scallions, garlic and ginger, s&p, and an egg. Rolled them and put them in the fridge to firm up.

Broth was homemade chicken stock, coconut milk, fish sauce, brown sugar, lime juice, tons of spinach, cilantro and scallions, sauteed ginger, garlic, a little onion, minced Thai bird chilies, makrut lime leaves, and turmeric. Simmered, then seared the meatballs and finished them in the broth for a few minutes. Made broken Jasmine rice (I just LOVE the stuff, and only found it today at 99 Ranch) and then poured the broth and meatballs over it. Broth flavor was very much like tom kha gai, nice and spicy, meatballs were tender and flavorful, but that rice was maybe my favorite part - adore the texture.

Tonight’s dinner while watching the American Idol finale was a rice noodle salad with cukes, radishes, asparagus and shrimp. Tiramisu for dessert.

Just the two of us. There were plenty of leftovers.

Yes – First, I make rice in the rice cooker, then I make up the peanut butter sauce.

It is basically peanut butter, add some cumin then add chicken broth and mix. I add a little chicken broth at a time until I get the consistency that I want.

Then pull the rice out of the rice cooker and mix in a bowl with the peanut butter sauce… Voila – Peanut Butter Rice!!

Lime-Curry Chicken Thighs with Baked Cauliflower and Egg-Caper Vinaigrette and Mashed Potatoes with Pesto - chicken thighs were sous-vide at 148F for 5 hours and after a quick sear finished with a compound butter made from butter, lime juice and zest, honey, Thai red curry, soy sauce and apple cider vinegar.
The cauliflower was simply baked whole with convection and served with a vinaigrette made with eggs, red onions, capers, chives, diced tomatoes, hints of curry powder, sugar, avocado oil and white balsamic vinegar.
The mashed potatoes had basil pesto, toasted pine nuts and potato cooking water incorporated
