Roasted rabe, mashed potatoes with scallion, and a wee skate wing with sage butter (my sage is growing again, so I have to get rid of all the sage butter I have in the freezer).

Tonight’s dinner was a new recipe courtesy of “Kitchen Sanctuary” on youtube. It was a “baked” Honey Garlic Chicken (breasts) served over seasoned rice. Peas on the side (not pictured). Both Sunshine and I really liked this dish and I’ll make it again.

Sausage, Peppers, and Onions with Melty Caprese - simple dinner from Colu Cooks. Different peppers, red onions and cherry tomatoes with some sweet Italian sausages are roasted in the oven. Topped with mozzarella for the last few minutes and finished with some basil

Fridge and freezer pretty much cleaned out thanks to my culinary ingenuity :D.
Leftover pepperoni pizza pie with some pretty tasty veal meatballz, tasted better than it looked.
Now off to CDMX for 6 days!

Didn’t feel like socializing after having gone out last night, so I cancelled our ladies gathering today. I’d seen a bunch of my bishes on Saturday anyway, will see a few of them again on Thursday at our final (public) show before Berlin, plus there’s still next week

Happy to stay home and enjoy our leftovers from Sunday: lamb chops & fasolakia. I had the few leftover potatoes for lunch, so I made a new batch of Greek lemon potatoes (not too salty this time, thankfully!) and tzatziki. Crumbled some Greek feta over the fasolakia to gild the lily. They were even better than on Sunday (like most bean dishes, better warmed up). I’ll never not use fresh grated tomatoes for fasolakia again. Even with out of season hot house tomatoes it made a huge difference.

Oh, and we finished the halal cart rice, too. Opa!!

In other news, we just booked an Airbnb on the Calabrian coast for early June

Went out for Taco Tuesday! Ate my weight in mini tacos, guac, salsa, and chips. Highlights included cochinita, fish, a cauliflower tacos, followed by barbacoa, shrimp stuffed jalapeno, and octopus tacos. Modelo for him and Pinot Grigio for me.
