What's For Dinner #116 - the Mardi Gras / St. Patrick's Day Edition - March 2025

Finished the sous vide corned beef brisket, and between nibbling on that and steak eggs for brunch, I wasn’t in the mood for the salmon I had planned for dinner.

So I had a bit of quinoa and rice with a pile of sautéed spinach to fulfill my vegetable craving.

Sliced up and froze the corned beef so I stop nibbling on it.

Tonight’s Oscar watch party was fun! We saw the live broadcast of the show and the theatre had a trivia contest during the ads. Congrats to Kieran Culkin for winning an Oscar for best supporting actor. Dinner was popcorn and two chocolate bars. Tomorrow I go back to healthy eating.

Dinner tonight was at a local restaurant that had a special menu to celebrate the holiday of Hinamatsuri, an annual festival in Japan that celebrates the health and happiness of young girls and women. (A holiday I was previously unaware of) The set menu included Salmon Oyako Chirashi made with raw salmon, ikura, green beans and
shredded tamago. Shrimp Chawanmushi with common bean, Kanpachi and Tuna sashimi with bamboo boiled in dashi, Asari Clear Soup with Manila Clams, Snow Crab Nutanegi w/ Yuzu Miso dressing, Grilled Miso Seabream, Chikuzeni, Shimeji w/ Shirasu Daikon Oroshi and a tri-layered Japanese Panna Cotta (Strawberry, Milk and Matcha flavored) for dessert. I also added an order of Nodoguro nigiri because Nodoguro is one of my favorite things in the world.

Goan Potato Chops based on a recipe from Season by Nik Sharma - mashed russet potato chops/patties are filled with a mixture of ground lamb, red onions, garlic, ginger, apple cider vinegar, sambal oelek and cilantro. After an egg wash and coating with bread crumbs, they get pan-fried. Served with some simple stir-fried bok choy (which also included some leftover patty filling)

There are as many enchilada sauce recipes as there are casas.
My favorite does not contain tomato products. Strictly chile ‘gravy’.

Yes, this recipe had tomato sauce in it. I may try to dial that component back a bit (next time I make it).

I’ll keep trying.

I don’t know who or how many will be here for dinner tomorrow night. My plan is to pull out the l.o. cioppino from December, add a few seafood goodies I’ve squirred away in the freezer and serve it over rice and with green onion cornbread with honey butter and a mixed green salad with 'cados that need to be used up. Italian ‘gumbo’. Easy peasy and it checks all my boxes.

No time to fuss around - the Oscars are starting! Homemade (weeks ago) pasta with tomato sauce (and a hit of ricotta and parm) and Trader Joe’s soy spheres.

Sorry I missed this @ernie_in_berkeley – yes.

The ground meat cooked with masala is a standalone South Asian dish, usually with potatoes or peas added, and eaten as the meat component of a meal (with rice or chapatis and dal).

My mom would add some macaroni to leftovers, and I loved that revamp and so I often make kheema without potatoes or peas just to use with pasta, or to make into shepherd’s pie.

Is this the world’s FIRST Michelin 3* chef frozen TV dinner?
Out of curiosity, I bought, this ’ Gordon Ramsay ’ Braised Roasted Brisket in Red Wine sauce a try!..there’s a Shepherd’s Pie offered too, but the content weighs sooo light!

I made some sai ua - northern Thai / Lao sausage this weekend following this recipe:

It was pretty easy to make - I made the curry paste in a food processor and stuffed the mixture into hog casing with a sausage stuffer - you can also make patties or caseless sausages without the casing.

I cooked a link up on Sunday. I thought it came out pretty well.
