Lighter dinner tonight after last night’s over-indulgence.

Salmon with an Irish whiskey glaze. I used Tullamore Dew, although the glaze recipe wasn’t worth it to use for salmon…better for chicken or pork. But it was still good.

Near East rice pilaf and steamed green beans alongside.

Glass of wine as well.

Picked up various pastries at Pizzelle Bakes in Lowell this morning. Has a fruit scone when I got home (cranberry) and will try a Craquelin Choux for dessert (Pate a Choux pastry filled with lemon ricotta cream and topped with crunchy craquelin of varying flavors). Also got some sourdough bread and a Gingersnap cookie and a Snickerdoodle cookie.

Good ol’ chicken noodle soup. Mirepoix, homemade stock, noodz, leftover piri-piri chicken breasts (with a little spicy kick), and lots of thyme. Saltines, of course.

We are having one of those atmospheric thingys where you cross your finger you get dinner on the table before you have a power outage. So far so good. Pork marsala with mushrooms. Rice with broccoli, orange baby bell and onions. Spinach, fennel, craisin, pistachio salad, honey mustard dressing. Wine.

I followed the recipe except I used tenderloin instead of chops.

We enjoyed another outstanding dinner at The Farmer’s Daughter in Newton, NJ, including short rib pappardelle; trout almandine with a brown butter caper sauce; crispy eggplant with honey soy, chilies, and scallions; lobster blini; scallops over mashed potatoes. It all went great with a couple of excellent red blends.

Dinner for the last two nights has been slices of this “Oreganata” pizza (with sautéed spinach as a green).

Tonight, a friend invited me over for his famous annual Guinness Brisket Chili, which he does in the Instapot. It was excellent, a nice alternative to corned beef and cabbage. Over mashed potatoes.

Tomorrow, there shall be corned beef in my house, but will be consumed via a Rueben. No one wanted the full “boiled dinner” treatment this year, which is fine by me.

Salmon baked with a mashed potato and cauliflower Irish champ crust. Side of steamed broccoli.

Forgot to add peas as I had meant to do, and will to the leftovers.

Very delicious and very easy!

(I would pick the toasted coconut strips out of an everyday Indian tea snack to the point where my family would think someone forgot to put any in :rofl:)

Chicken larb tonight with 3 Thai birds to 1 lb meat. I made everyone drip and cry. They were super potent this time.

Thank you for the additional background. As it happens, I had a friend in high school was a foreign exchange student in Bremen. I haven’t thought about her in years but your mention brought back many memories.

Trader Joes used to carry these (I think) under their own label. I guess they were discontinued because I can’t find anything on them now.

Not sure yet WFD tonight. My sweets has been dealing with discomfort due to a diverticulitis flareup, poor guy… so we’ll have to confer later :frowning_with_open_mouth:
