What's For Dinner #116 - the Mardi Gras / St. Patrick's Day Edition - March 2025

WWFD? I’m not sure. I lost interest in what I had originally planned. Did a freezer dive and found an unmarked carton of what looked like chicken soup. There was chicken, noodles, carrots and also mushrooms, kale and a bit of bacon. I added more chicken broth and noodles. It hit the spot. Little gem, kumato, radish, green onion, green goddess salad. Warm baguette and butter.

Yes Sir, beg, borrow, or steal, but you gotta get down to the ATL area (thereabouts) to do so to borrow.

Alternatively, I thrift store shop a lot and notice that in kitchenwares, once one gets past the worthless nonstick pans, waffle irons are about #3 in stock behind the multitudinous George Foreman type grills, and the $12 (retail - also for some reason $12 at thrift) toasters.

These clams were in the sand on Wednesday and dinner on Friday. Linguine with clam sauce. Olive oil, white wine, lemon, lots of garlic and chopped garlic became the liquid for the very lightly steamed clams. Butter stirred in at the end.

Mini meatloaf from a Martha Stewart Living recipe from October 1998. Very garlicky braised green beans. Sour cream mashed with a butter lake.

We enjoyed another outstanding dinner at Cafe Panache in Ramsey, NJ, including jumbo lump crab cake and seared shrimp with saffron risotto and lobster sauce; herb crusted lamb loin, savory bread and butter pudding, rosemary garlic jus; garlic shrimp; octopus with eggplant caponata. It all went great with a couple of excellent cabernets.

Wagyu filet of beef. Caesar salad with anchovy dressing and garlicky-buttery croutons. A snort of armagnac (or two) for the cook.

So I met up with my nephew (in from L A. to ski with sis and BIL) and sister this morning, then he and I went to Best Buy, where I ended up with a Chromebook and wireless mouse. And since I used Amex Membership Rewards points to get a Best Buy GC, and I was expecting to get a more expensive one, I still have about $140 left on the GC. My nephew said I could spend it on him for his birthday/Christmas. :rofl: It’s nice to get a laptop for free.

Then to Wegmans nearby to pick up the makings for dinner after consulting with my nephew to see if he would like it…he looked at the recipe on my phone, looked up a picture, and said “Yes, make that!” Brought it all down to my sister’s and BIL’s and cooked dinner for everyone. Sis was very appreciative to NOT have to cook, and I enjoyed cooking for others, which I rarely do.

Chicken Cacciatore on linguine with steamed sugar snap peas. I had a half glass of the Malbec I had purchased for the chicken; very good!

Everyone enjoyed dinner; we had a good visit. He stayed with them rather than with me, since they’re heading back up to Maine tomorrow to ski again since the wind holds are being dropped.

Finally, some of the daily afternoon visitors they get…there were 7 Toms and about 16-18 ladies. Two of the toms were easily 30 pounders, and definitely the bosses over the younger toms.

NYT Garlicky Chicken With Lemon Anchovy sauce. Delicious, will make it again. Asparagus with hollandaise sauce and Aleppo pepper. Spinach, hbe, bacon salad, sweet & sour dressing wine.

Made Gumbo Z’Herbes based on a recipe from Cresent City Cooking by Susan Spicer. She finishes it with fried oysters (and oyster liquor ) but I skipped those and also used veg stock instead of chicken stock. I was making this tonight because I meant to make it yesterday and didn’t want the greens to wait another night, but when I tasted it I quick made rice. Will definitely fall back to this recipe again.

Flatiron steak marinated in soy sauce, dry vermouth olive oil, garlic, parsley, black pepper, and rice wine vinegar. Baked potato with white cheddar and fresh chives, and sauteed spinach. Killer Saturday night meal!

Bombay martini to drink.

Tonight I made chicken Marsala, roasted asparagus, lemon pesto angel hair with Parmesan and capers, a green salad, and cauliflower puree (I skipped). Hit the spot and better than dropping a hundred bucks at our local red sauce joint.
