My PIC was finally feeling well enough to go back to work today. It’s his bday Saturday, so I hope he’ll be 100% by then — plus we have our whirlwind trip to NYC and Philly next week, so I better not get his crud, either!
We had to stay up until midnight last night to lock in a founders’ rate for a gym that has been advertising on SM for several months now, and that is finally going to be open for bidned at the end of the month
They had a big event today & we picked up some shwag before our PM cuppa. It’s a 5 min drive from our house & I’m pretty stoked to finally get back to exercising. First personal trainer sesh is free & already scheduled! Swoleness, here I come
As for the most important question of the day, i.e. WFD — why, it’s Taco Thursday!! We’d picked up TJ’s fully cooked pulled pork a while ago, but since my dude was taking a meat break we hadn’t had a chance to make it yet. TBH it didn’t look particularly appetizing when I first took it out of the nuked pouch,
but once I crisped it up in the pan & added a few shakes of Penzey’s taco seasoning it looked more appealing.
Served on fried-up flour tortillas with avocado, chopped onion & cilantro, pickled jalapeño & a variety of hot sauces it was pretty tasty.
2 tacos each were a-plenty, and we have another ½ lb. of that pulled pork left. Probably not a repeat purchase. Carnitas aren’t that much work, after all.
