What's For Dinner #116 - the Mardi Gras / St. Patrick's Day Edition - March 2025

I made some sai ua - northern Thai / Lao sausage this weekend following this recipe:

It was pretty easy to make - I made the curry paste in a food processor and stuffed the mixture into hog casing with a sausage stuffer - you can also make patties or caseless sausages without the casing.

I cooked a link up on Sunday. I thought it came out pretty well.
