What's For Dinner #114 - the 1st Quarter Century Edition - January 2025

Just curious… could one make sushi rolls with that tuna??

Anytime Ahi Tuna goes on sale, I grab it and make sushi rolls.

Maybe. I’m not really fond of sushi. I can see it over ramen, though.

I understand… sushi isn’t for everyone.

My girlfriend loves sushi, especially rolls – so I try to make them for her whenever I see something (on sale) that I can utilize.

I had a lot of potato peels leftover from these Potato Cheese balls. I saved half to make crispy potato peels for the two of us and put the other half outside for the rabbit that resides in my backyard.

I just went outside and my bunny rabbit invited one of his friends over for breakfast. Apparently, I now have two rabbits residing under the bushes in the backyard. They were munching away, they saw me, nodded and kept on eating.

I’m pleased nothing went to waste – everyone is eating and is happy!

I love bunny season in our neck of the woods  In fact, I love the bunnies, the squirrels, the chipmunk that resides beneath our gas grill, and with which our cat is obsessed. He’ll spend hours under the dining table stalking the little critter, even though it’s unlikely he’s still around.

We were invited to a dinner party last night by our friends with whom we met up with in Sicily last summer, along with two other couples we didn’t know — surprisingly both “Fulbright” couples like us: one met in Barcelona, the other in Cairo, although the non-US partner was Syrian, not Egyptian. A rather international table, and it was great meeting new folks

Our hosts served a lovely avgolemono for starters that was absolute perfection: creamy & lemony to the max (some zest was added on top). In the right corner is a bourbon sour, which was our aperitivo. I’m not big on bourbon, but I do enjoy the occasional sour, and this was quite nice.

The main attraction (and boy, was it ever!) was a whole grilled red snapper for each guest! Perfectly cooked & simply dressed with olive oil and lemon. So summery!

Sides were very flavorful saffron rice, a wonderfully zippy fennel salad, also simply dressed with just olive oil & lemon & lotsa fresh parsley,

and sautéed kale I didn’t hate

Dessert was a Wegmans fruit tart brought by one of the guests, a Hindu dude who teaches Buddhism and Hinduism, complemented by B&J’s chocolate brownie batter ice cream.

We stayed till around 10pm commiserating about the sad state of the world — another guest teaches sustainability at the business school (who knows for how much longer) — at which point I had practically lost my voice. Hope I can at least vocalize at practice today :crossed_fingers:t2:, as we have 6 new songs to work on that I’d like to include in our two upcoming shows next week.

PS: I have no idea why all the pics are different sizes

I went out for brunch today so I wasn’t terribly hungry for dinner so I made a romaine salad with roasted peppers.

Picked up a 3 lb. boneless pork butt at Wegmans yesterday because I’ve been craving Pork, Sweet Potato & Apple Cider Stew. Took off at least 3/4 of a lb in trimming the fat cap, so it ended up a perfect amount for this dinner.

Carrots and sweet potatoes added after an hour, and served on egg mini lasagna noodles.

There was a glass of wine.

Bengali style fish pulao, which I wrote up for the Biryani thread. This is biryani adjacent - you layer rice that has been cooked with cardamom, black cardamom, cloves, cinnamon, and bay leaf in coconut milk and water with fish that has been cooked in onion and ginger-garlic pastes, chiles, mustard oil, and more coconut milk, scattering in more green chiles and fried onions as you layer, letting everything cook together for a bit to fully come together. This was a fun two day project and will yield at least 2 more meals for 2!

After a ratty night of sleep and therefore zero energy today, I made it through practice after all! Turns out we only had 5 songs to work on, so that was far less exhausting than 6 would’ve been

WFD was roasted BISO chickie thighs seasoned with Chinese chicken seasoning — basically MSG & white pepper. Easy tasty, and very, very sawlty. I also sliced up a lonely fennel bulb from the crisper, brushed with a lil olive oil & shprinkled with parm.

Iceberg salad with maters, cukes & radishes and CK buttermilk ranch. Even bothered to augment with fresh dill, parsley, Thai shallot & lemon juice. Probz coulda used a bit more ranch, but I’ll add some to the leftover salad, of which there is plenty for lunch.

We were invited to dinner with our neighbor and his daughter. He cooked vegetarian chili and cornbread, preceded by tortilla chips, salsa, and guac. For dessert I made a rum Bundt cake topped with chocolate ganache and rum-vanilla whipped cream:

Tuna-melt with smoked albacore on homemade buttermilk rye. Cheeses were 'merican and (yes, still working on it) the Cougar Gold.

I had planned on a green salad tonight to go with, but after the third day of below-freezing temps, and us being still an outdoorsy couple, hot soup after a busy day in the elements seemed a better route. Pantry to the rescue. A pint of our canned roasted tomato puree, mixed with garden basil (from frozen), homemade serrano chili pepper sauce, a little garlic and some olive oil. Good (hot) stuff! Topped with parm for umami.
