What's For Dinner #114 - the 1st Quarter Century Edition - January 2025

I found a lone chunk of boneless pork in the freezer. After much thought on how to stretch it into a meal, I came up with the idea of cooking, cubing and adding it to a quiche. So, tonight’s dinner was a Pork, Onion and Black Olive Quiche (peas on the side – not pictured).

I was also starting to worry about the eggs in the fridge getting old, so this seemed like a good solution. The crust didn’t want to cooperate, so it looks a little wonky, but tasted fine.

Fish and chips. A little slab of what they said was sea bass, pan fried, with the last of the bag of McBain fries. Kewpie lemon aioli.

Last night’s dinner was Mujadara my first time making it. I used this recipe https://maureenabood.com/lebanese-mujadara/

Mrs PB declared it a keeper.

Also aubergine with a tahini garlic sauce and roasted cauliflower and broccoli.

I made a riff adding mayo, harissa, cumin, and lemon zest and juice to the marinade/rub. It worked really well!

LOVE that addition - now, if ONLY I could find the packet of harissa powder I had purchased awhile back that my sister seemed to have put away somewhere when she “straightened up” my kitchen while I was hospitalized. :expressionless:

It was hands down one of the best meat sauces I ever made. I blame my ‘genius’ idea to add the cinnamon stick :wink:

I’m making a shopping list for this weekend, and corn tortillas are definitely on my list to buy so I can make tacos very soon as well!

I went to a screening with a local film society last night. I am now working in the office on Thursdays so I didn’t have time to have dinner before the show so I went to my favourite pub up the street for dinner after. As luck would have it they have a blues themed open mic night on Thursdays. So I ordered dinner and listened to the blues for awhile. I was considering ordering another beer but I couldn’t see the stage so I left. I hope to go back next month, sitting at the bar next time so I can see the stage. Oh and the chicken and rib combo and beer I ordered were very good.

That’s a Ken’s I haven’t tried. They used to have a cucumber dressing I liked. Haven’t seen it in years.
