What's For Dinner #113 - the Holiday Cookie Frenzy Edition - December 2024

Welcome home! And I’ll bet that’s the best meal you’ve had in awhile  I’m glad to hear you are doing well and I hope the boys are finished being mad at you.

I had a late afternoon doctors appointment yesterday then last night was the season fiinale of The Voice. I didn’t have much time to spare between my return home and the start of the show so I deferred the salmon salad I had planned to tonight. So I had udon noodles with peanut sauce, chili oil, and cuke for dinner. Prepping the sauce and slicing the cuke was done while the noodles were boiling.

Time for the show! I had a chocolate pistachio cake and vanilla hazelnut coffee for dessert.

So glad you are home and two furry boys to welcome you. And may you know get some good sleep! Hospitals are so bad for sleeping, just when you need sleep most.

Sorta ramen, sorta not. I made a turkey stock with leftover bones, lots of ginger, garlic, onions, soy sauce, dried shiitake mushrooms, kombu, kepap manis and black vinegar. Served with napa cabbage , purple bok choi, kamaboko, rice cakes, 7 minute eggs and toasted nori. I sprinkled some wasabi furitaki and shichi togarashi on mine.

Are you using a bamboo steamer? I use a stainless steel steamer and I never have sticking issues.

Yes, bamboo. I’ve had decent success with cooking oil spray, surprisingly, than with brushing the entire surface like I did yesterday. For some reason I’d decided I wasn’t going to need any cooking oil spray in Philly anymore and took it back home on Thxgiving

I WAS WRONG :face_with_symbols_over_mouth:

looks yummy. it’s been awhile since i have had a lamb chop… many, many years actually.

I love copper, I used to collect it but it’s a pia to clean. That blue milk can would look perfect in my kitchen. Fwiw I have replaced the black plastic with stainless steel.

Braised cicerchia beans (from the freezer, thank you past me from September!) and broccoli rabe with orecchiette. Parmesan and red pepper on top. Perfect dinner to help us weather the bomb cyclone passing through tonight!

Tonight’s dinner was soba noodles with salmon. The recipe calls for cooking the salmon on a cedar plank which I don’t have so I baked it in the oven.

Smoked pork steak (experimental buy from the TX purveyor of my beloved sausage slammers; tasty but will not be a repeat purchase), spinach with lotsa lemon, leftover sour cream mashed.

Which is better?

Being awoken at 6 a.m. to stand up in those awful hospital johnnies be weighed to see if you magically lost weight while sleeping in a hospital bed?

Or being awoken at 6:45 a.m. by a cat Mrrrowing in the hallway (to ensure there are amplified sound effects between 2 floors) and then having the Zoomies?

Not sure, but I had Option B today. Sumbunny was hungry and wasn’t going to let me go back to sleep.

Yup, I’m home. :cat:

Reading, laundry, and a bit of laptop work today. Three XL black tiger shrimp from Aldi were seasoned with olive oil and ground black pepper mixed with dried powdered lemon peel.

Sauteed a Tbsp of minced shallots, about Tbsp or so of white wine with a splash of lemon juice to cook down for a sauce, and then the shrimp for a minute each side.

Served on Basmati rice with steamed asparagus alongside.

Water. But there was FLAVAH!

Tonight I was baking for school, so my DH made dinner. He made mapo cascatelli from Anything’s Pastable (adding fermented black beans). I quickly made a side of Cantonese-style asparagus amd aromatics flashed with hot oil. We were a little bit dubious about the pasta sauce until it all came together, but it was good.

I want to jump right into both dishes. Is this meal vegetarian/nearly vegetarian?
