Adventures with pork belly!
First photo is right out of the oven, pretty, but skin didn’t crisp up and it was tough as leather(fat cap was too thin)
Second photo is after I removed the skin and popped back in the oven for about 10 mins ,skin crisped up like crazy up.
Last photo was dinner. pork, cheesy potato gratin(from the freezer), sauteed broccoli and cherry tomatoes ,caramelized onion demi, sprinkled with pork cracklings.
The shrimp went very well with the spicing — I don’t think I’ve ever had shrimp in a dry pot: fish, lamb, beef, even mushrooms and tofu, but not shrimp for some reason.
But the winner was definitely the curry chicken soup. It’s a flavor bomb that’s so much more than its scant few humble ingredients!

Paprikoff? Stroganash?
Whatever y’all wanna call it, we called it a satisfying, delicious meal. Pork tenderloin chonks dusted with heavily seasoned (hot Hungarian paprika, s&p) cornstarch were seared in an oil & butter mix, then removed. A small diced onion & sliced baby bellas followed suit. Removed those, then added a squeeze o’ tomato paste & ‘nduja to toast/dissolve. Deglazed the pot with whatever open red was nearby, added a little water, a lil blob of chicken BTB. Added the shrooms & half a sliced red pepper & let it all simmer a bit. Added the tenderloin chunks back, a splash of heavy cream, some chopped parsley — et voilà.
Sprouts market was all out of egg noodz, which would’ve been our pref, so we made do with fresh pappardelle
Red butter lettuce, avocado, tomatoes & cukes with augmented (crushed garlic, lemon juice, parsley) CK’s ranch dressing.

Dinner tonight was stirfried veggies and pork chop with lo mein noodles.
And dessert was a butter tart and blackcurrant tea.

That’s great new, but until I see a picture of you sitting safely on your couch with the boyz then I will raise a glass.
Pork burger, seasoned with s&p, garlic, cumin, chipotle. Served on a jalapeno cheese roll with red cabbage & cilantro slaw, chipotle mayo. Roasted yam, craisins, toffee pecans, red onion, rosemary, parsley salad, oo, lemon, honey, s&p, chipotle dressing.
