Old school chiles rellenos made from some super sized poblanos (I’ve never seen them that size!) with red sauce and the roomate made a nice side of guac. A few store bought tortilla chips finished off the meal. Yum.
We enjoyed another excellent dinner at Drew’s Bayshore Bistro, in Keyport, NJ, including Chicken cordon bleu with Andouille sausage and Swiss and mozzarella cheeses, with a whole grain mustard sauce; octopus with a muffuletta salad; broiled oysters; spicy Cajun shrimp; crispy lobster cakes, and fried calamari. It all went great with a couple of excellent red blends.
Pork Tenderloin with Pineapple and Mango Sauce and Pisto Manchego - pork tenderloin cooked sous-vide (140F, 3 hours) and served with a sauce made with pineapple juice, mango, brown sugar, ginger and cornstarch. The pisto mamchego was made by sauteeing tomatoes, onion, garlic, green pepper, zucchini and parsley in lard and cooking it in its own juices.
Made a batch of Great Northern Beans today and used them in a very loose adaptation of a Nigella Lawson recipe for beans and smoked cod. I used hot smoked coho salmon, because that’s what the store had. I added a great deal of melted leeks and shallot that also weren’t in the recipe and topped it with garlicky bread crumbs that also weren’t in the recipe…ok, I was somewhat inspired by the idea of the recipe and then mostly did my own thing. I also made a salad.

Plate full of bowls! Skate with sage caper butter, a little salad of sorrel and tomatoes from the balcony (happy December!) plus red onion and avocado, lentil soup.
Well, THIS was unexpected on the size of the dinner! Thought it would be 1/3 the size!
This was Asian Chicken Stir-Fry. WAY too much sauce, but it was really flavorful! Nurse Lucy said it was a fan favorite.
Didn’t eat it all, but ate the chicken pieces, some rice, a spear of broccoli and a few forks of green beans. Definitely won’t need the banana I got for for 9-10 p.m. fill up pre-NPO at midnight before tomorrow’s procedure.
Today’s breakfast, lunch and dinner were my favorites out of 7 days of hospital eating.
Not sure how awake I’ll be tomorrow for dinner. Guess we’ll see. But there will be the banana for after I wake up, provided they don’t take it while I’m knocked out. But I’m hoping this will prevent that.
Tonight’s dinner started with a spinach tomato salad
Then onto chicken with mushroom sauce
And last but not the least was a chocolate brownie and blackcurrant tea.
I made Milk Street’s mojo chicken and sweet potato tray bake:
It was easy and good, except the sweet potatoes were overdone because I used convection. I would cut them thicker or add them to the tray later.

In my multiple hospital experiences (in Greenwich CT and Providence RI) for my dad’s stays over the last decade, I have found that the dining services folks delivering the food were so kind. They knew that my dad looked forward to mealtime so they were a friendly face for him. I did my usual stacking of plates, like I do in restaurants, which they appreciated. And we would take home stuff that dad didn’t eat, like juices or the oft-discussed jello. B and I think it must be a way to get more liquids into patients.
I’ve taken many photos of dad eating in his hospital room, but I’ll save him from the indignity of sharing those on the internet.
We enjoyed another outstanding dinner at Alfie’s in Warren,NJ, including surf n turf with filet mignon (with blue cheese), and lobster; calamari with balsamic reduction, hot Italian sausage, and hot peppers; string bean salad with blue cheese, beets, and tomatoes; pasta with pesto sauce; veal with port wine, asparagus, sundried tomatoes, and cream. It all went great with a couple of excellent cabernets.
A busy day in our little kitchen. I made two cheese logs, a batch of knäckebröd, a cocktail rye, German potato salad, a roast chicken, and a brioche dough.
The crackers and cheese – along with some smoked salmon – will go towards nibbles for the rest of the week. The brioche is for tomorrow’s WFD (mushroom tarts).
WFD tonight was the lemon-roast chicken and warm potato salad, along with leafy greens in vinaigrette.
Spent the afternoon in the kitchen today, making a batch of kimchi (hadn’t made any in over a year!), a tortilla de patata for tomorrow night’s dinner, and Japanese beef and daikon in a dashi broth.
The kimchi has daikon, scallions, carrots, and cabbage, of course, and is sitting in a dark place for the next day or two before it goes into the fridge.
For the tortilla, i used my new wide mandoline to slice the onions and potatoes super thin to make sure the potatoes turned out tender enough for the BF’s dental issues. I think it worked, but we’ll find out tomorrow. I liked the method, though, made super quick work of it.
I added carrots and onion to the beef & daikon dish just to make it heftier, and a hard boiled egg between us. Used that super thinly cut Wagyu-style beef I got from 99 Ranch last time - so good! Just super beefy and tender. The dish turned out great, especially paired with some hot Japanese mustard I got on our trip and only just now opened.
Awesome!! you should probably sleep with it under your pillow.

Tonight’s dinner was Sour Cream Chicken Enchiladas. This was a new recipe for me. It was pretty good… I’ll need to play with it some and adjust to our liking.
Chicken piccata, mushroom and asparagus risotto. Mixed greens, tomatoes, red onion salad, asiago peppercorn dressing. Negroni.
