After an uneventful day with an incredibly underwhelming lunch but good food shopping — Scottish lox, smoked steelhead & a few bagels from Biederman’s, tonight’s dinner was an easy-peasy super-lazy affair of leftover Tuscan soup from the freezer & a salad.
As you can see, the white beans all but disintegrated into the soup, giving it extra heft 
Those pepitas really add a nice kronch as a topper
