What's for Dinner #112 - the "Pre-Holiday Crazies" Edition - November 2024

I was going to make an orzo and shrimp recipe tonight but the warm weather had me craving salad. All the usual suspects, Louie dressing, garlic bread.

As gutted as a lot of us are feeling these days, we still gotta eat. Comfort food was had with my sister out at an Italian place to soothe our souls, Mexican leftovers with the BF, ditto. To get back on track, tonight the BF made me a crispy tofu salad in an Asiany dressing. With red lettuce from probably the last week of our farmers’ market this season, and a sprinkling of spicy sichimi togarashi that I bought in Japan. I love their little screaming faces… kind of apropos for this week.

It was comforting. Tonight there was zucchini in the meatballs, and spinach (and mirepoix) in the orzo. I’ve made it with spinach in both however, and just as good.

Leftovers with the addition of green veg.

Roast chicken (I peeled off the crisp skin and ate it before the pic, oops), mashed potato, and sauteed spinach.

A big batch of sauteed spinach always seems like it will last forever, and yet it’s usually finished very fast.

I couldn’t even do that last night. Went with a bowl of Raisin Bran Crunch cereal.

That is about 99% likely to be my exact dinner tonight.

Finally cooked. A pork stir fry with the leftover pork loin, broccoli florets, red bell pepper, and onions over Basmati rice.

The sauce was a combo of teriyaki sauce, vinegar, minced garlic, grated fresh ginger, honey, hoisin, a bit of chili paste, and cornstarch to help thicken it.

I really wanted a glass of wine, but don’t want to deal with potential reactions until I know what’s going on with my meds, so I stuck with water. Again. :unamused:

Another Scandinavian fish soup. Shrimp and halibut. Combined at the table. Also, scalloped potatoes, roast sweet potatoes, roast parsnips, leftover charro beans, corn on the cob. Purchased raspberry tart, lemon tart and Basque cheesecake slice.

If you are pausing on your wine consumption for now, are there other drinks you might like to try? I’m thinking along the lines of de-alcoholized wine or flavoured sparling water for example.

Tuna noodle casserole made with Campbell’s condensed soup. Comfort. It’s been a long week.

On Tuesday we were nauseously optimistic, and on Wednesday
we were just nauseous :face_vomiting:
Anyway, we enjoyed an excellent dinner at F1rst Restaurant, including melt in your mouth filet mignon in a red wine sauce, with spanikopota; mushroom Wellington; pillowy gnocchi with roasted butternut squash, toasted walnuts, blue cheese, in a sage brown butter sauce; fried calamari and artichokes with
roasted red peppers, kalamata olives and a lime Caesar aioli. It all went great with an excellent red wine blend and cabernet.

Actually, no - mom never made it with cheese so neither do I. Truth be told, though, the panko topping was a little dry - probably would have been better with some cheddar mixed in! Next time.
