What's For Dinner #110 - the Earth, Wind & Fire Edition - September 2024

This was from the posh butcher that sources from known farmers. It was labeled prime which I believe - it was butter tender - and was $25.99/pound. My steak was .59 lb and I will get two meals easily from it, maybe three.

I used bay leaves and substituted Wondra flour and a bit of French onion soup mix and beef bouillon for the gravy mix. I was also surprised at the chili heat level from these pepperoncini. Oh well. For the time and ingredients it takes, I probably rather just have classic pot roast.

If you have a KKC(Krispy Krunchy Chicken) near by, I’ve heard they’re the bee’s knees of fried chicken franchises. We don’t have them up north here unfortunately.

This afternoon I made a bunch of vegetarian food to bring over to my friend and her family who have COVID:

Meera Sodha’s aloo gobi paneer tray bake (subbing halloumi), rajma masala adding amchur, plus plain yogurt, Basmati rice, naan, and chocolates. Totally forgot to snap a picture.

We lazed out at home tonight after that messy adventure and had a late meal of TJ’s chili rellenos with leftover rice.

Indianish. Dal, butternut squash curry (spicy), noodles with tomatoes, Serrano peppers, Thai basil, mini papadam, pineapple chunks. Trying to reduce the veg drawer/pantry backlog……

Last night: Lucy burgers stuffed with carmelized onion and sharp cheddar, grilled outdoors. Outside temp 85°outside, 66° inside—perfect. So were the burgers! My cole slaw and corn on the cob for sides.
Tonight: mac and cheese and bell pepper slaw. Same weather, but somewhat overcast and smokey. Nice easy weekend, just us two.
No pictures, sorry.

A nice BC King Salmon, pan roasted with salt and pepper. A proper Caesar salad with anchovies and warm, buttery croutons.

Made Woks of Life’s Chinese egg and tomato stir-fry for me and the BF - my 3rd time making this dish, I believe - ultra comfort food. He made boiled chicken dumplings, and I took a little of the filling and made a fried Vietnamese rice paper dumpling (saw a bunch of videos on Tik Tok & Reels.) Turned out UH-MAZING. All of it was really good, though i would add more sesame oil and possibly soy sauce to the egg & tomato dish. But those fried rice paper dumplings had the greatest texture - super crispy outside, tender and a little chewy inside (two rice paper sheets) - they were very close to restaurant Imperial Rolls, but just pan fried - the filling gets cooked first. BF’s dumplings were fab as usual. Sauce for both dumplings was soy/white vinegar and slivered fresh ginger.
