Yup. One b/s chicken breast, cut up and combined with pasta and some veg, will usually give me enough for 3, sometimes 4, meals.
Took my poor guy 5.5 hours to come up here from Philly yesterday due to some horrendous accident that shut down all the lanes
While he was on the road, our hostess and I checked out a lovely Latin festival downtown & brought some delicious pernil home for him to munch on after that long trip
The gang organized an impromptu poker game since we were in town, and put out an inviting spread, including a lovely homemade tomato chutney. She thought it was spicy. I thought that was cute… it had a pleasant tingle
We ordered Indian for delivery that took forever to get to us: daal makhni, lamb dhansak, saag paneer, baingan bharta (my fave & hands down the best dish last night), and a chicken dish I can’t remember RN — coulda been curry, coulda been makhni
It’s always nice, but nothing to write home about. Heading back to Philly today after picking up some much needed kitchen gear at the house, i.e. my salad spinner, a couple of pots, a pan, and one of the cat perches for Mr. Chonky. Hopefully the drive back won’t take as long, as we’re hoping to swing by the SEA market en route to grab MOAR of those amazing Lao sausages
Bummer the elevators in our building are out of service, and have been since I left. Will be fun to get shit up to the 6th floor

Early rooster dinner-
Shrimp cocktail, avocado, goat cheeses with pomm syrup, hard boiled egg, pineapple, pimento olives. This and that.
Leaving on a jet plane tomorrow, so dinner was take out from my local burger joint.

Thanks! I’ve been baking salmon in the oven to minimize the amount of fried food I eat, which isn’t much. Pan frying salmon fillets once in awhile won’t hurt so I may give it a try next time.

Dunno if you own an air-fryer, but I was pleasantly surprised just how well it worked for a black garlic marinated salmon filet recently. I may take it out just a little earlier next time, since it continues to cook & I prefer mine medium
But the skin was crispy (very important to me), and the meat juicy and tender.
I don’t have an air fryer so fry pan it is.
Broiling works, too, of course.
