Made a platter of tomatoes and mozzarella BF brought home with some fresh basil and sourdough bread for DIY Caprese. We also had some salami, chorizo, and Serrano ham (not pictured). IPA for him and rosé for me!

I woke up wanting saffron rice with pistachios. This sounded good, but it was meh. I’ll eat the leftovers. Just won’t make it again.
Only change: I used b/s chicken breasts vs BISO chicken thighs, and all chicken stock vs water.
Sauteed sugar snap peas and red bell peppers with s/p, dried marjoram and dried savory as the veg.
Wine.

Italian sausage and rapini pizza, and a Spiced Old Fashioned at a neighbourhood joint called DeSotos.
I split the pizza and I’m still peckish. LOL.
Do I go grab another slice somewhere else, or eat some instant oatmeal at home?

A Tale of Utter Culinary Disappointment:
I think I may have mentioned the lack of proper cookware in our pad, which left me with trying a one-pan pasta tonight, prepared in the only decent, high-walled braising pan: fancy lemon linguine with shrimp & baby spinach.
After having finely diced a shallot, chopped up some garlic, and sliced a couple of peppers, I managed to knock over the mise plate containing all of it & spreading it all over the floor. So, off to a good start after already being in a ratty mood
The second round was sautéed in olive oil, to which I added the lemon linguine and water, brought to a boil, then watched what happens.
Well, what happened was that the pasta released a STO starch (more than one could possibly ever want), making the final product look like some Chinese white sauce lo mein dish.
I’d parboiled the shrimp, so I added those & the baby spinach at the very end. The goopy ‘sauce’ had but a whisper of garlic, the pasta itself was al dente yet sticky, and it was overall pretty inedible garbage. I ate the shrimp and tossed the rest
Looks like I won’t be cooking much (pasta) until I get my own pots & pans down here. Yikes. OTOH, it turned out to be a much healthier dinner without the pasta, as my standard ‘rugula salad with lemon dressing & parm was just fine.
Blah.

Boy, I don’t miss the tyranny of shitty pizza at kid events. Linner was a great idea!
Hodge podge. We went kayaking on the Potomac with a group and spouse went out to lunch with them after. He brought home leftover gyro and fries. For dinner I made ginger garlic eggplant (at 9 o’clock), air fried tots and mushrooms, and reheated gyro stuff.
Thai-style Crying Tiger Beef on the grill with Nam Jim Jaew dipping sauce. Chopped garden salad with a lime-peanut oil dressing and roasted peanuts. Long grain rice.
We enjoyed another outstanding dinner at Drew’s Bayshore Bistro in Keyport, NJ, including an awesome eggplant boat stuffed with seafood; spicy Cajun shrimp; Cajun meatballs; escargot. It all went great with an excellent cabernet aged in bourbon barrels and merlot.
Mini penne with Italian sausage, onion, garlic, anchovies, capers, splash of red wine, bottled marinera and a squidge of tomato paste sauce. Parm reg and parsley. Sweet gem, radicchio, red onion, cuke and tomato salad, oo&v dressing, toasted baguette with garlic butter. Negroni and wine.
Pizza Saturday.
Tomato base with mozzarella. Black forest ham , red onion. Finished with oregano from Calabria.
Was it good . Yes
What I have learned. Taking my usual dough recipe.
Cutting it by 50 % . Made for a much dryer dough. Every ingredient is precisely measured on digital scales. Don’t no why . Will I be halving the dough recipe again. Ehhhh I dont think so . Next week the 70 % hydration.
Butterball (bone-in) Turkey Breasts were on sale this week for 99 Cents/pound. I grabbed the biggest one in the case and slow cooked it today. Tonight’s dinner was a mini-Thanksgiving. Turkey, baked sweet potato, corn, stuffing, cranberry sauce and gravy. There is enough turkey leftover for Sunshine to have some turkey salad sandwiches for lunch (over the next couple of days).
Looks great!! I don’t know much about hydration, but I seem to get better results with a wetter dough.
