Too many scallions in the garden – what’s a girl to do?

Scallion pancakes (+extra uncooked for the freezer). Leftover Tsukune meatballs. Dipping sauce. An Asian slaw with peanut-ginger dressing.

Dinner was hotel apps, nothing worth mentioning. However, the cake - made by a local bakery in honor of friend’s Jeopardy appearance - was outstanding. Right up my alley. Yellow cake with mango, very not sweet whipped cream frosting. I am not normally a dessert person but this thing rocked

Tonight BF made an old favorite - bean toast! He made cannellini beans in a smoked turkey stock using part of a smoked turkey carcass we had in the freezer from December (!) - turned out super creamy, very smoky, delicious. With a little chopped up Huachana sausage (a Peruvian brand I picked up locally) - very tasty. On the side, sauteed yellow squash and tomato quarters.

Stir fry. BBQ pork tenderloin, carrots, cauliflower, broccoli, red baby bell, snow peas, garlic, splash of chicken broth, hoisin, gochujang sauce, topped with green onions. Pickled cucumber, daikon, red chile, black sesame salad. There was wine. Chardonnay :astonished:

I had a few peppers left from last week’s CSA (part of a red pepper, part of an orange pepper, part of a yellow pepper) so I roasted them and served them over angel hair pasta.

Corn Salad with Shrimp from “Colu Cooks”- shrimps, poblanos, green peppers, scallions, fresh corn and zucchini are all sautéed at different times and then mixed with feta and basil

The chicken dinner that almost never was…
leftover rotisserie chicken, mashed potatoes, sauteed green beans and gravy.
Gelato from a new joint in the nabe. Pistachio and Nocciola. Tasty :yum:.
Made a new fren on my walk back home, my day is complete :blush:

Chunks of chicken, red bell pepper, onion, and CSA zucchini, all done on skewers on the grill pan, with my Dad’s satay sauce, all served on Basmati rice.

Wine.
