What's For Dinner #106 - the Sneezles & Wheezles Season Edition - May 2024

It was Haircut Day.
Meaning it was Wegmans Day.
Meaning it was Scallops for Dinner Day.

Five lovely dry scallops were seasoned with s&p and pan-seared in butter and olive oil, and served on top of spaghetti tossed with a sauce of sautéed shallots, white wine, lemon juice, and a smidge of both pasta water and heavy cream, with steamed asparagus, with a lemon zest, parsley, and minced shallot gremolata sprinkled on top.

There was wine.

Damn, this was really good!

Another visit to Nopa https://www.nopasf.com/ - currently one of our favorite casual restaurants. Not sure if it is a good or bad sign that the chef at the pass starts to recognize us. We are slowly eating through the menu but dishes like their burger are a great repeat.


Wood baked gigante beans, breadcrumbs, oregano pesto and feta


Flatbread of tasso ham, spring onion, collard rabe and horseradish


Wood grilled cheeseburger, pickled onions and french fries


New York steak, grilled favas, dried cherry mostarda and red wine demi-glace


Rhubarb galette, huckleberry honey, strawberry, almond frangipane and vanilla bean ice cream

Whole wheat spaghetti with sausage ragu from the freezer and a ton of garden chard with garlic, chili flake, and oo.

Some delicious Creo chocolate truffles from Portland for dessert.

I have a few Amazon pans which I really, really, really like.

They were marketed as “AmazonCommercial Tri-Ply Non-Stick”. I don’t think they offer them any more, which is a shame. I would have happily purchased a few more as back-ups. They’ve stood up to quite a bit of abuse, and the wide, flat bottom accomodated a good load of what have you.

Tacos carnitas redux.

Homemade carnitas on store-bought tortillas with homemade refries, sriracha mayo, pico de gallo, and (not shown) pickled peppers from the garden.

We enjoyed another outstanding dinner at Cafe Panache in Ramsey, NJ, including seafood pasta with white wine and garlic; black bass with lobster sauce; tuna tartare; octopus with eggplant caponata; coconut cake for dessert. It all went great with a couple of excellent red blends.
The appetizers were split into separate portions.

Someone somewhere mentioned that it was soft-shell crab season, and a local fishmonger had some. Sauteed in EVOO, with a Meyer lemon butter sauce with parsley, and fries.

I have to say, they weren’t completely soft-shelled. I had to place a napkin nearby for the chitin bits I couldn’t chew. Not cooked properly? But the crab butter blended richly into the butter lemon sauce and the fries soaked it up nicely.

Pizza Saturday. Im really liking the Gozney arc xl oven. 63 % hydration. Adjusting the yeast weekly .
24 hour dough fermentation .Cooked at
946 degrees.
Tomato , Pecorino , Mozzarella .
After cooking. Added arugula , and prosciutto.

That’s a great sounding prep for gigantes. Making a mental note of it (that is likely to disappear almost immediately :melting_face:).

It was delicious. It contained lobster, shrimp, and calamari.

Sunday night in Berlin usually means Thai. We went back to our favorite joint in the hood, and I was REALLY looking forward to that amazing muh grob we had last time. They were SOLD OUT :sob:

We had to pivot & got the chicken skins instead (very good, but not F’n fried pork belly),

the som tam,

tod mun pla,

and stir-fried eggplant for our main.

We’d already decided not to order the heat level we did last time… and ended up adding hot stuffs from the condiment tray :smiley:

They didn’t skimp on fresh sliced peppers on the fish cakes, at least. Should still be a calmer morning than after our last meal there :wink:
