What's for Dinner #101 - the Holidaypalooza Edition! - December 2023

I’m going to take this tangent elsewhere

That looks delightful.

It really was. It gave me serious drink envy while I was sipping on my Old Fashioned

Lots of take out, soup and deli meat sandwiches lately. Not really good. So tonight we threw root veggies in the oven with fresh thyme and rosemary, did strip steaks in the cast iron (finished in the oven) and had some wine. Hit the spot and felt like we ate a little bit better.

A made a batch of moro beans from Rancho Gordo, kind of a cross between a black bean and a pinto. Very hearty on their own, but also they play well with other ingredients. Tonight they were cooked with chipotle chiles, tomato, onion, and garlic and garnished with cheese, cilantro, sour cream and hot sauce. There’s some rice buried under there too!

Keep on healing! Looks like you have an appetite there!

Our favorite local brewery was doing a tap takeover at a bar downtown & two of my bandmates were providing the musical entertainment, so we swung by for a an hour that seemed to mostly consist of sound checks

Had a delightful Kölsch and a Czech dark lager that was more reminiscent of Schwarzbier.

I prepped all the things I could for dinner before we left so I could hit the ground running once we got home: a fiery Thai red curry with beautiful wild-caught cod I picked up yesterday, Chinese eggplant, bok choy and Thai basil, for which I had to drive to 2 different Asian grocers in town. Worth it

It was really cold and gloomy here today, so the curry hit the spot. I wish I’d added extra lemongrass or ginger for depth, but the heat was on point – 4 extra bird peppers along with a whole can of Maesri provided the tongue-tingling warmth we desired

That looks good to me - I might even be able to taste it. Almost 3 months post-Covid and my tastebuds still aren’t performing except for extremes. DH made Jagerschnitzel with mushroom gravy and egg noodles for dinner tonight. I had some of the gravy on the noodles, but had the Schnitzel bare with a lemon wedge and some Dijon mustard. All I could taste out of all of that, along with roasted spargel, was mustard and lemon. It’s getting old…

I feel your frustration! I haven’t had Covid, but lost part of my taste buds many months ago. I don’t get, just don’t get it.

Thanks to beefeaterrocks & Mr_happy I decided to take the plunge with Mr. B’s BBQ shrimp. So many recipes out there. Tossed with thin spaghetti and served with toasted bread. Very good.

And for dessert with a movie later on . Chex Mix made today.

I made pad krapow gai but used ground chicken because I initially confused it with larb/laab (pick your favorite). Served with brown rice and tenderstem broccoli with fish sauce, soy sauce, black vinegar, crispy garlic, and shallots. I put back half of this rice that my DH plated. More room for spring roll. Served with garlic-chile vinegar.

I would lose so much weight if I couldn’t taste anything! I’m sorry you’re still struggling with it, though. Super-frustrating for sure :frowning:

I’m sorry it has happened to you - do you have any idea why? We’ve had Covid in our household about 3-4 times - lost my smell and taste once before but recovered about 2 weeks later. This time - no dice.

Harkening back to @Phoenikia’s thread on Non-Italian Pizza (here and here): thin-crust pizza with apple, bacon, caramelized onion, a thyme-infused bechamel, gruyere, low-moisture mozz, and a home-smoked cheddar cheese. A combo of balsamic vinegar and boiled cider for drizzling. Delicious.

Greens in vinaigrette on the side.

Last night, no pic, a toasted ham and brie sandwich on marble rye, eaten half in the kitchen, I was that hungry.

Tonight, leftover masala dal with zucchini, ambemohar rice, and Bengali-ish mustard salmon that I roasted from frozen because I was so hungry (there’s a theme building).

A couple of nights ago, masala dal with zucchini, garlic naan, and chicken malai kabab.

Black eyed peas, smoked ham shank, collards. Food of the gods. Corn bread muffins, butter, tomato, cuke, onion salad with oo&v dressing, dill. Red Snapper, Beefeater Rocks x 2.
Dessert is fruit cake and eggnog. I’m still celebrating Repeal Day.

Smoked salmon, red onion, and spinach omelette. The only things missing were the bagel and the cream cheese. Served with toasted challah with butter that was too cold and some cherry tomatoes because I usually eat my bagel, cream cheese and lox with tomatoes.

I really didn’t feel like cooking tonight, so I threw together a quick pasta meal. I microwaved some frozen meatballs, cream of mushroom soup, a can of peas and some pasta. I did try to add some legitimacy to my creation by topping it with some shredded Parmesan cheese. It was OK and I did put a hot meal on the table… Good enough.
