Spinach Mushroom Lasagna (needed a good bit more salt and pepper, and maybe some freshly grated nutmeg) and a quick salad of butter lettuce, shaved carrots, chopped red bell pepper, chopped Backyard Farms tomatoes, sliced radishes, cubed Havarti cheese, and a lemon-tarragon-mustard vinaigrette.

Wine.

I bought some frozen tamales at the farmers market the other day. They were sold out of pork so I bought the veggie ones, figuring if those were good, the pork would be amazing. Well, the veggie tamales were delicious this evening. Served with rice and beans, plantains, and pico de gallo.

I have had this on my radar for soooo long. I even emailed a prior HO discussion about it to myself as a reminder, but still haven’t gotten “roundtuit”.

No - that’s the recipe but we liked the recipe a lot and thought that the combination of hummus and “meaty” portobello goes very well together

I made the beans for this a few days ago and held them in the freezer until today. I used the papa de rola beans from Rancho Gordo (about 8 dry ounces). This is outstanding! The caramelized onion and fresh thyme really put it over the top. I left off the bread crumb topping because we were having it with bread, but it would not detract if included.

My beef was in the freezer for 6 wks before I got around to it, so you’re forgiven :wink: There is also limited series on Netflix called beef which is funny in a cringy oh shit I can’t believe they did said that kind of way. Recommend both beefs.

Six jumbo fried shrimp tonight with sub par fries. Takeout. Tarter & cocktail sauce. Made my own coleslaw. Pretty good.

I don’t know of any way to get fries takeout without them being sub-par. Maybe they can be refreshed in the air fryer, I guess.

But the shrimp look pretty kick-butt, as does your (homie) slaw!

I made thus a few weeks ago...Rana ravioli (spinach and ricotta?) with pan fried grape tomatoes, a bit-o-spinach, garlic slivers, grated parma, pine nuts and a splash of cream. I saw the recipe somewhere and can't remember where and just winged it. Pretty tasty.

Another forgotten recipe pasta dinner from a few weeks ago. Artichoke hearts, shrimp, garlic, lemon with sketti in my big cast iron skillet, age 70+. I think it needed more seasoning and definitely more lemon!
