What's for breakfast? (2024)

There are green shakshukas, poaching eggs in cooked / wilted greens. I like those a lot.

I’m a little tired of tomato shakshuka and menemen at restaurants. I don’t tend to order it these days.

I do use tomatoes for various tomato and egg dishes at home.

Nope, since all those are tomato / egg combinations.

@Phoenikia I could groove to eggs with greens. Eggs + spinach are an amazingly satisfying combo.

Smoked silver salmon on toasted focaccia with cream cheese, scallions, and pickled onions. Summer fruit and berries. Gazapacho (for as long as tomato & cucumber season lasts).

I had a little sliced ham left in the fridge that needed finishing up and a fridge full of veggies. So I made tomatoes and beans in a vinaigrette dressing with the leftover sliced ham and skim milk on the side.

Breakfast tacos with chorizo, eggs, American cheese, onions, tomatoes, jalapeño, and cilantro. I tried using a tortilla press for the flour tortillas and they came out a bit thick, I should have pressed more. So I cut a slit in them pita style and made sandwiches.

This looks delicious.

Leek and bacon scramble. Panko-crusted, parmesan zucchini slices, toasted using the air-fryer setting on our countertop convection oven. Buttermilk-chive sauce for dipping. There was gazpacho.

Eggs El Tovar. No picture. Lox benny with scrambled egg and lemony Hollandaise on
a Thomas’ english muffin. Left over streamed asparagus to sauce up a bit.
Muffin was off, I’ll have to write Bimbo about that again.
