I don’t have a meat slicer. If u do maybe give it a whirl? Once you eat that no regular white meat turkey sandwich works anymore.

Yep it’s too ambitious and trying to figure out substitutes for a couple of ingredients was a little complicated. But I’m glad I made it… once, lol.

What would I do with turkey legs? Braise them or smoke them to add to greens and beans.

I ended up freezing the plain thigh, and the harissa seasoned thigh, as I’m still working on the Buffalo turkey wings ( yum!), and heading out of town.

Just heard Evan Kleiman describe confit turkey leg as “sort of like the carnitas of turkey”–yum!

Whoa, that’s a lot.

Late to this, but got turkey thighs on sale in October and, after searching recipes, made confit with garlic and chilis from Epicurious……amazing! Turned it into delicious carnitas the first time, and have repeated twice. Uses a good bit of olive oil, which can be strained, refrigerated and reused. They freeze well, and are great to have on hand for an easy dinner.
