Whatever recipe you use, try adding in some baked jackfruit.
Gives the chili more body and texture than more traditional non-meat substitutes like tofu, seitan, or just beans.
I find Bob’s Red Mill TVP has a good texture in chili, Bolognese sauce, etc.-anything that uses ground beef. (At least that’s my opinion and I’m sticking to it.)
I personally love green chili: saute a diced onion, two cloves garlic a few minutes, add 2 diced jalapenos, 3 chopped green peppers, saute a few minutes more, add a cup TVP, 2 cups broth, 5 chopped tomatillos, 2 cans rinsed canellini beans, 1 tsp oregano, 2 tsp ground chiles (not “chile powder”), 1 tsp cumin, 1/2 tsp pimenton, 1/4 tsp cinnamon; simmer for 30 minutes.
My favorite is the Vegetable Chili from the New Basics Cookbook. I found a copy of the recipe here:
I usually replace the fresh tomatoes with canned tomatoes. I use half the olive oil.
I’ve made this a couple of times a year for more than 20 years. I like it better than any chili with meat.
