Saturday night’s dinner was an easy throw together quiche casserole sort of thing with cottage cheese, broccoli, ham and leftover shredded turkey. It was my first time trying the convection feature of the oven and for some reason the quiche took nearly twice as long as usual…odd.
Sunday, I finally opened the Instant Pot that has been sitting in a box for nearly a year now. I bought it last year on Amazon Prime day but had no room in the old place to store it so it sat in my bedroom in a box for a year. With all the hype about it this year I finally decided to open the darn box and give it a try. I picked up a pork shoulder at Costco and gave it the ol’ Kalua pig treatment served as a salad with a mustard BBQ yogurt dressing. When dinner was finished, I started a batch of yogurt which is now straining in the fridge. So far, the Instant Pot is living up the hype.
Using up the last of last seasons tomatoes before the first ripe ones come. Dried tomato greek pasta with feta and olives last night. Tonight a cheat pressure cooker pork stew with corn salsa and frozen cherry tomatoes

Today was Ripe Avocado Day!
Dinner was very retro hippie food… I semi mashed the avocado with some lemon juice, smoked salt, and cilantro, then topped some seedy whole grain crispbreads with the avocado mix and hemp seeds. Some sliced cucumbers and radishes on the side to scoop up stray avocado bits.

Finally, summer has arrived, half way through the real summer. Made Köfte and cooked it on the Weber. In the mince there were shallots, flat leaf parsely and garlic. I just used packaged Köfte spice ix in the lamb mince.
Got a kilo piece of boneless lamb leg meat and got the butcher to run it through the grinder once (I like my mince coarse). This is how I get my mince. Once whilst queueing at the Turkish butcher’s meat counter a Turkish man and I chatted about how we like our lamb done and what we would make with it. We both liked all the same things! Always buy a big piece of lamb and get the butcher to mince it for you. This way you can control the coarseness and know what goes in your mince.
I made half of the mince into “burgers”. Need to find Turkish kebab skewers. They are flat and very wide especially for the mince.
Lots of aubergines. The mince smelled amazing! Grilled flatbread brushed with some oil and Köfte spice mix.

Birthday today . Headed down the hill for lunch to Dunsmuir brewery for a pint and one of the best hamburgers around . Side of mixed green salad with oo and raspberry vinaigrette . Tonight it’s up the hill to Weed for Asian-American barbecue . It’s a little whole in the wall place I have wanted to try . The meats are grilled over oak , has a lot of great reviews . A bottle of Windy Oaks pinot noir to drink .

We have a show at the local pub tonight, so some of my WFD buddies know that could only mean one thing: cheeseburger club & fries. Both shared with my man, of course, lest I bust out of my stage outfit

Late night at work so pulled out some chicken mole’ from the freezer, served over rice seasoned with my morita and guajillo powder. Love the spicy slightly sweet flavors.

Salmon cakes are always good but last nights were really REALLY good. Too bad I have no idea what I did differently to try to repeat it next week! I made a really lemony mayo to go with, as usual.
Back to the grill tonight- 5 pounds of chicken thighs with a spice rub and a marinated great big london broil. Zucchini and asparagus will join the meat over the fire. Yum!

I don’t really have a recipe (which is why I’m afraid I can’t repeat last nights!) I used one of the large cans of wild salmon from Trader Joes, 2 well beaten eggs, some finely diced celery and onion and a bunch of “everyday seasoning” from Trader Joes (in the grinder bottle.) i mixed it well with a form, put it in the fridge for an hour and then divided it into 4 patties that I cooked over medium heat in a wide skillet with coconut oil. I topped them with the lemon mayo and a sprinle of dried and ground piment d’ espelette from the garden.
Thank you … so no bread or cracker crumbs to
bind…maybe that’s it.
I will substitute lemon mayo for straight mayo
and piment d’ espelette for paprika. I have not
cooked with coconut oil but I’m willing to try it.
It’s back to 105 here…ugh. We reheated some carnitas and made soft tacos. Mashed avocado, lettuce, pepper jack, and homemade escabeche were the available toppings. Cold beer for the side.
One of those things you don’t want a huge piece of due to cost and richness of its fabulous fat. I prefer the loin chops of the two.
Tender and delicious, if very rich. I brushed the meat with some oil and good paprika powder. No other seasoning.
The portion of each is small but you really don’t want more than this much anyway. Almost like Japanese marbled beef in terms of richness.
