I’ve been buying the Ford Farm cheeses at Demoulas (Market Basket) for a couple of years. At first the coastal cheddar, lately it’s been the cheddar with caramelized onions (which is better than the Trader Joe’s version). Relevant to this thread, I was pleased to find for the first time that my most recent chunk had lovely crystals in it!

I think that a good cheese with crystals is old gouda and aged cheddar.
