It looks like I will be getting a delicata squash in my share this week. I usually bake it then eat half as a side dish for dinner that evening then put the other half in the freezer also for a side dish. I’m thinking it would make a good vehicle for a stuffed squash. The only one of my cookbooks that has stuffed squash recipes is my Joy of Cooking cookbook but the recipes are uninspiring. Most of the stuffings are creamed ingredients. I’m not sure what I’m looking for so I’m looking mostly for inspiration at this point. Does anyone have favourite stuffings?
I usually go for something like sausage and apples with sage. There are a lot of good looking, similar versions on the internet. This one caught my eye with the addition of pecans, spinach, and cranberries:
I find most squash (zucchini and yellow squash aside) and pumpkin to be on the sweeter side of the flavor spectrum, so I tend to go with savory fillings — think ground beef or lamb or pork, or chopped up & sautéed mushrooms and breadcrumbs. A little feta or ricotta salata might also be a nice addition.

Makes a great vehicle for Southeast Asian fillings that are used for Dumplings, Fried Rolls or Quenelles/Cakes(think Shrimp or Crab) Strong flavorings like Curry Paste, Black Pepper, Lime Leaf or Lemongrass all work very well.

I’ve never stuffed a squash. Maybe I need to get some ideas here. Weirdly, my son was super afraid of butternut squash when he was a baby. If he saw one he would look terrified and burst into tears.
