What is your favorite roasted chicken recipe or method?

I was talking to someone the other day who said he really didn’t like Costco’s rotisserie chickens - the texture and taste were very off-putting to him. I’ve never tried them.

Interesting read, thanks for posting.

Too salty for me. Could vary depending on the kitchen staff.

I trust his judgment. And I don’t like over-salted poultry anyway.

My cats snub my human food!

Even chicken???

Yes! Go figure.

Thanks! I love the buttermilk powder dry-brine idea.

Paper bag. Thank you for bringing it up. When you want to save some crisp, it’s the only way. Bread too.

I really miss being able to get a sliced while you wait loaf of really good rye bread, placed into a paper bag, with a wonderful crispy crust to go with the tanginess

I know bakeries that will do that!

That’s how I get my sourdough.

Langer’s deli has some of the best rye bread I have had. Dunno if you can order just the bread, but if you buy a couple of pounds of their pastrami, you get a loaf with it. Yum!

I did get it at a long-closed, legendary local bakery!

I’m literally on the opposite coast! I’ll have to check if any kosher bakeries are left near me.

GoldBelly.

Gold belly ships from New York, too. So does Zabars.

I’m going to try this later today after a buttermilk brine, and with new potatoes under the rack.

With egg salad to ponder which came first.

Might set off a thrift store stampede to scoop up all those castoff Romertopfs!
