What is your best food hack?

Ok, here’s mine, so much more than the sum of its parts:

Roasted Tomato and Red Pepper Soup ( I like Pacifica Organic in asceptic packaging, don’t care for TJ’s)

1 quart carton of Pacifica Roasted Tomato and Red Pepper Soup
1tablespoon olive oil
1 shallot, finely minced
1-2 teaspoons smoked paprika
2 ounces dry sherry ( I like Amontillado)
Whipped cream, whipped with a tablespoon of sour cream stirred in for garnish, if desired.

Add the olive oil to a 2 quart saucepan and sauté the shallot until soft. Add the paprika and stir to toast. Add the contents of the soup and let simmer 15-20 minutes. Add the sherry & cook gently until the raw taste of the sherry is gone. Garnish with the whipped cream sprinkled with some additional paprika.

This is dead easy, everyone loves it and wants the recipe. I typically make it for dinner parties where I need at least 1 easy dish. We also love it on a rainy evening with grilled cheese sandwiches. Enjoy!

Use a pureed soup in place of half of the milk when making strata. For example, tomato soup in a strata of cheddar, salami, and oatmeal bread. Or a ham, swiss, and rye with split pea soup strata.
