What is the ONE THING you CAN cook....in other words, what is your best dish?

I use a pressure cooker to make mash potatoes;

  1. Little water, or cider, or beer, maybe 100-200ml in the pressure cooker (mine is a stovetop).
  2. Washed potatoes in, peeled if you like but they’re super easy to peel once they come out of the pressure cooker, albeit a lil hot.
  3. Time 15 mins at high pressure then natural release.
  4. Remove potatoes (CAUTION - HOT!!!), and reserve and reduce left over liquid from pressure cooker to approx 25%.
  5. Peel potatoes with a butter knife as necessary, then put each potato through ricer, and combine with the reduced cooking liquor, butter, and cream to desired consistency.

Actually the best dish I can cook, anyone can cook if they can steam water; Dungeness crab :crab:. 18 mins in 2” of water on a plate in a stock pot. Hardest part is getting the crab in the pot. Extra long tongs help.

Then, honorable mentions, none of which are complicated: Caesar Salad, reverse sear beef of any kind, roast chicken, beef barley mushroom soup, linguine with clams, various iterations of scallopini and—- I’m not going to get into any fights with Southerners here :joy: — ambrosia. If I decide to make it.

Oh, and oven roasted ratatouille, before NYT Vooking got hold of it.

Never tried that. Good idea. 15 minutes, eh? I always rice for perfect mashed potatoes.
