Little water, or cider, or beer, maybe 100-200ml in the pressure cooker (mine is a stovetop).
Washed potatoes in, peeled if you like but they’re super easy to peel once they come out of the pressure cooker, albeit a lil hot.
Time 15 mins at high pressure then natural release.
Remove potatoes (CAUTION - HOT!!!), and reserve and reduce left over liquid from pressure cooker to approx 25%.
Peel potatoes with a butter knife as necessary, then put each potato through ricer, and combine with the reduced cooking liquor, butter, and cream to desired consistency.
Actually the best dish I can cook, anyone can cook if they can steam water; Dungeness crab . 18 mins in 2” of water on a plate in a stock pot. Hardest part is getting the crab in the pot. Extra long tongs help.
