I’ve been out of town visiting my mother for her birthday, a visit that was busier than usual. However I did want to bake something for her (it is very hard for her to cook or bake now due to severe vision loss) and a friend I was seeing, so made Dorie Greenspan’s Blondie recipe reduced to fit an 8x8 pan. I used chocolate chips, some butterscotch chips, and coconut. I should have checked all of her ingredients first: the brown sugar was so hard it was a solid in the bag, and took me about 20 minutes to hack out enough to soften in the microwave. In any case, a very reliable recipe!
Jalapeño cheddar biscuits based on a recipe in ATK Savory Baking. I made half a recipe and rolled them too thin, but they puffed up nicely. I used the trimmed scraps as croutons in my tomato soup.
Found some almond paste that needed to be used, so I made panettone scones https://www.thevanillabeanblog.com/panettone-scones/

I have it from the library and this is the first recipe I’ve tried, so we’ll see! They were really good though, and biscuits/scones are not something I make or eat a lot.
Here in MN the leftover candy gets frozen in a zip bag. Quality stays good for over a year.
If I had room in my freezer I would do that!
These were unsurprisingly good! I soaked the fruit in dark rum and orange curaçao but I don’t think much of the flavor came through against the almond paste in the scone.
Back at work tomorrow after being off for about a week and a half. I made pumpkin bread with chocolate chips . Chocolate chips were “optional” but come on. Looking forward to trying it tomorrow..

Portuguese sweet potato buns from Milk Street Bakes. I made these last night to have with a shrimp and bean stew, but I had already eaten by the time they were baked. They are easy and delicious. Think of a slightly denser orange English muffin with a hint of sweetness. They are started on a griddle, then baked. I didn’t try one warm out of the oven, but I’ve been eating them split and toasted.
My daughter requested we make something “winter-y” yesterday after we received our first snowflakes. I had a bag of cranberries I wanted to use up so we made this cranberry gingerbread.
I’ve got mixed feelings. I love the flavor combo, but I have no idea what the texture is supposed to be. It’s extremely moist and dense - I wonder if we over mixed the cranberry mixture into the cake. I may try it again since the flavors are really in my wheelhouse and as she requested it has a very wintry feel to it.
