What are you baking? February 2026

Another focaccia (my friend kept the first one), so that I could make a sandwich I’ve been craving.

I mixed the caramelized onions into the dough this time, along with rosemary and red chilli flakes. Very tender and tasty again.

The sandwich was inspired by one I ate in Hong Kong at a little Italian bar (actually this bar, which is ranked top in the world by some listicle, though I thought the food was better than the drinks :joy:) – focaccia with pesto, pistachios, castelvetrano olives, burrata, and mortadella.

I finally acquired all the ingredients at the same time (I had eaten up the mortadella previously while proscrastinating on the focaccia :rofl:)
