One of my favourite recipes, but I rarely have cream on hand ( it calls for 2 Tbs) so don’t make it often.
I haven’t been baking, been doing nothing for a week because I was very sick with bad flu. (Covid came out negative) I’m fully vaccinated, last November got flu shot and RSV.
I texted my exercise class instructor, she said others have been out too. She always wears a mask but no one else seems to.
I had no energy, no appetite at all.

@Aubergine that is awful! I am so sorry. My friends who have gotten the flu said it was absolutely terrible and they literally could not get out of bed
Get well soon. 15 years ago, no energy/no appetite were my early pneumonia symptoms, which eventually progressed to troubled breathing; I NEVER want to have that again!
Pneumonia is just horrible!
Cheese Soufflé
3 Tbsp butter
1/3 cup AP flour
2/3 cup whole milk
1/4 tsp salt
Pepper
1/4 tsp mustard powder
6 eggs, separated
1 cup grated Gruyère cheese
Preheat oven to 375°F
Melt butter in large saucepan
Stir in flour and cook 1 minute on medium heat
Gradually blend in milk, while stirring with wooden spoon
Cook until thick, then add seasonings. May also add finely-chopped chives or scallions
Remove from heat, then mix in egg yolks and cheese
Beat egg whites until stiff
Beat 1/3 cups egg whites into base mixture, to lighten, then fold base mixture into egg whites, not the opposite (seen in lots of recipes)
Put mixture into buttered 6” diameter soufflé dish. Gently level with a spoon or spatula
Bake in oven for about 30 minutes till puffed and brown. Serve immediately; a soufflé waits for no one ,
Note: the original recipe is for 4 eggs, and is supposed to serve 4, which I find stingy. I use 6 eggs for 2 people, though in this day and age …….

I really never get sick, last time was when my daughter gave me Covid but since was vaccinated, wasn’t too bad.
This flu (had had a fever, still have a cough) wiped me out. It was ALL I could do to feed my cat twice a day.
I don’t see how anyone could have gone to work with that.
I didn’t even turn on the tv the whole time!
I am curious what problems you encountered because from here it looked like a resounding success. Very happy to hear you will be reporting, I love your cooking projects!! The more endless ramblings the better from my point of view.
I recently made cottage cheese pancakes and they had the same dark speckles. Thanks for the recipe as I have too much cottage cheese at the moment and that bread looks great.
