So you put frozen halves into the Marian torte, and they don’t give off puddles of water …?
Haven’t tried it in this particular cake, but according to the NYT, you can.
I use frozen fruit for topping cakes frequently (even juicy ones, like peaches) with no issues. I suppose using plums here cut side up could help mitigate any juiciness, but I’m not expecting it to be a problem.
I’ll post results!
Wow didnt realize italian plums were hard to get in your area. Every fall i get about three baskets in costco for about 8.99 canadian each. Each basket pitted and halved is 8 cups. I freeze them and make jam in the winter. I use some fresh ones for baking.
Finally experimented with an eggless (and white sugar free) version of an orange olive oil cake for my mom.
This didn’t have the benefit of the zest-infused sugar, but I did have the whole orange to work with so it did have the juice instead. I used yogurt and milk in place of the egg. It has baked up quite nicely (I know I sound surprised, I shouldn’t - people here use yogurt as an egg substitute in cakes all the time). The color is from using jaggery in place of sugar.
I’m interested to see how the orange flavor does tomorrow.
Mom did make me cut into it as soon as it came out of the oven, even though I warned her it would be gummy if it didn’t cool a bit. No matter, she enjoyed the first slice anyway (now whom do I complain to that my mom made me do it? )
My first time trying these. Also first time baking with lard.
Man, if you want crispy cookies, lard. I should probably have pressed these down a bit to get them flatter, which would have improved the egg wash coverage too.
But they taste great and are VERY close to that ‘Chinese restaurant almond cookie’ I’m trying for. I’m guessing there’s lots of industrial tricks to get that texture right, but these are an excellent starting point.
Baked a peach cobbler! Doubled the cobbler part and did not pre-cook the peaches. Turned out excellent but most importantly, my gang (cats) are enjoying nibbling on the cobbler part of the cobbler.
First time I’ve baked in many months
Had some gnarly bananas so made this (in the countertop oven)
Questionable nutrition, but delicious…and her vegan recipes are fantastic whether you’re vegan, vegetarian, or omni.
My mom’s cat when I was a kid would stand on her head for peach cobbler. Other fruit didnt matter, it had to be peach.
Somewhere theres a photo of her conducting a late night counter surf, with a slice of peach hanging out of her mouth.
My daughter used to have a cat that would beg, insist on cantaloupe.
Apricot amaretti 6” cake, also made some apricot gelato to accompany it. The crumbled amaretti provide a nice crunch for the cake.
Peach and blueberry cobbler with cornmeal biscuits from Smitten Kitchen.
Had to talk myself into trying this recipe, because Deb’s crispy peach cobbler is a serious all-time fave for me. But I had cornmeal in the fridge and I like the crunch it gives, plus I picked about 4 pounds of seriously beautiful blueberries yesterday, so I whipped this up for brunch dessert for my mom’s friends. It looks very blue, but there’s a bunch of peach in there, too.
Verdict: another keeper from Smitten Kitchen. We had this just slightly warm, and I didn’t yearn for any ice cream or whipped cream or anything, which is the sign of a highly successful fruit dessert in my world
Aside from peeling the peaches, the only thing I’d change about this is doubling the topping. It’s really, really good.
A stunner. I love it.
Have you tried Willie’s Crisp? It’s my favorite.
Thanks , mig, the apricots were delicious.
Your cobbler looks excellent! I love blueberries with other fruit.
Same. Somehow the combination elevates everything.
Yes! I find the best of blueberries can be a little one note.
I love that!!!
Cats are the best, love love love love
