What are you baking? April 2025

Thanks

Amazing. I’ve never made these but always admire them.

Equally as good and about the same sweetness and lightness but nice and spicy (as in flavour, not heat). They bear no resemblance at all to anything in the grocery stores. The lemony hits from the chopped candied peel are really nice.

Thanks. They’re less involved than Chelsea buns as there’s no rolling and filling.

I winged a Tsoureki-inspired buns today.
First 4 had an apricot jam glaze

Next 5 had a quince jelly glaze.

I baked another Tiger Cake tonight for Sunday’s lunch with my friend’s family, using the other recipe this time (True North).

While I wait for it to cool (and try to resist cutting into it out of curiosity), I thought I’d share some videos from my research today that result in pretty cool patterns at the end (the round ones especially, which I was tempted to go with, but I have transport considerations again and a loaf is much easier).

Today my financiers are just as moist as yesterday. Maybe try baking them a minute or 2 less.

Ok. Have to wait till my next crème caramel for leftover egg whites.

A luscious little tart, raspberries, vanilla crème patisserie and pâte sucrée. The crème was whisked a bit before putting in the prebaked tart shell, I used vanilla bean paste which added lovely little flecks of vanilla beans. The crust was crisp and flaky , just perfect with the pastry cream. I made a variation of my usual crème and added a little gelatin as I might use some of it as a cake filling. So nice when everything works on point. Happy Easter everyone!

Thank you, Stef!

Its also a birthday here today. Request was for a chocolate cake. My recipe is from Nigella Lawson book called Feast. Old-Fashioned Chocolate Cake. You can put it together either in a fp of mixer. I made it in a mixer. The decoration is mini chocolate crispy pearls. Oh i hate frosting a cake. Now on to making pizza and then thats it for the day.

Just pulled these out of the oven. I made them with homemade peach jam, Mom’s favorite. Smell divine!

Lucky mom! Which recipe did you try - KAF or TSE?

Almost done baking for tomorrow.

I tried the True North recipe for tiger cake, crumbs taste very promising :joy:

For savory, I made an assortment of mini egg bites, which were unfortunately more laborious because I have misplaced my silicone liners for the mini muffin tins and had to use paste on the tins and then extract them carefully when they stuck to the rims.

Spanish tortilla, spinach and parmesan quiche, and ham and cheddar quiche.

I might still make a small orange cake, let’s see.
