I had to shuffle the plan around a bit so we had the ragu tonight. It was okay… we didn’t love it. The sauce part was too runny - even with the extra 20-30 minutes the recipe called for - and was missing something. I didn’t have the patience to tinker with it, though. Will probably just freeze it and plan to use in a future lasagna where there’s more going on.
It doesn’t always work but when I have something like that ragu and it’s missing something, often a few hits of Red Boat will rescue it. Worth a try on the frozen portion, it definitely won’t make it worse.

Monday, 09/22- Ordered out; cheesesteak stromboli and jalapeno poppers. I skipped the poppers since my stomach has been bothering me lately.
Tuesday, 09/23- Breakfast for dinner. Matty had BEC sandos and I had scrambled eggs w/ cheese and bacon.
Wednesday, 09/24 (tonight)- Stuffed mushrooms! Portabella mushrooms stuffed with fresh mozz, roasted red peppers, pesto, and bread crumbs.
Thursday, 09/25- Pork chops. stuffing, and veg.
Friday, 09/26- Our local Greek festival is happening which means I’ll be having the lamb shank and lots of loukoumades. Normally I would go with my husband and our friends but we’re about a month out since my sister passed and I am not in a festival kind of headspace. Matthew will bring me some home and that is fine with me.
Saturday and Sunday are up in the air but usually I cook on Saturday and hubs cooks on Sunday since I work from home that day. I hope everyone is having a good week and hanging in there as ::vaguely gestures at the world around us:: all of this is going on.
Squeezed in a few more days here and it feels like bonus time, so less stress and the mood is a bit lighter.
Another big festival is underway – called Navratri in some parts, (Durga) Puja / Pujo in other parts. Same idea, varying celebrations: the 9 night (nav =9, ratri = night) festival celebrates different forms of the mother goddess Durga. The 10th day is a big holiday in its own right, called Dashera / Dussehra / Vijayadashmi (das = 10, because it’s the 10th day, vijay = victory) celebrating the victory of good over evil – when the goddess vanquished a demon and saved humanity, and also when the Lord Ram vanquished the demon Ravan as depicted in the epic Ramayana.
Ideas for the week:
– Mushroom “umami” noodles + schezwan chicken wings
– Chicken liver masala a la dad + crostini + salad
– Butter garlic crab (still pending)
– Masala-stuffed whole pomfret + dal + rice
– Mom’s roast mutton + potatoes
– Mushroom & truffle risotto + salad + maybe roast chicken
– Pasta with raw tomato sauce + salad + maybe shrimp
I’ve pulled together a list for the next couple of weeks, which I’m noticing is pretty Asian heavy. It’s also full of meals our kid is really unlikely to eat much, if any, of. It’s hard to blame him as I was pretty much raised on a rotating menu of spaghetti with meat sauce, grilled/roasted chicken, ground beef tacos, pot roast, pork chops, homemade chicken tenders, fish sticks, and assorted casseroles and stir-fries plus pizza, Burger King, and Chinese. I wasn’t exposed to anything terribly adventurous at his age (8).
That said, it’s a PITA to make separate meals when I can’t force at least the components of what the adults are eating on him. /endrant

Tonight’s dinner is the salmon following notes from @Saregama. I’ll probably focus next on whatever I can make with what we already have. Definitely the sage sausage pasta tomorrow.
