Actuals for the last week of Sept., cooking for 2 or 3 in MN. My sister had a Saturday wedding shower to attend here in MN, driving 7.5 hours each way, and combined the trip with a Fri PM - Sun AM stay with me. We had fun just chatting, sharing recipes, and reading our books side by side at the breakfast table. Bonus - my house is cleaner and less cluttered than it’s been in recent memory. And I had a great excuse to “play” in my kitchen, baking, on Friday before she arrived.
Mon: Slow cooker chicken tikka masala with brown rice & cashews, broccoli, red grapes. This stretched to be lunch most days, with some added rotisserie chicken meat from the freezer for the final serving.
Tues: Chicken salad sandwiches on cranberry walnut bread
Wed: Chicken tikka masala, white rice, sliced apple
Thurs : Composed salads - Skillet-cooked shrimp, steamed asparagus and cherry tomatoes on salad greens, Thousand Island dressing. Sliced fresh apple. Naan bread
Fri: BAKED - Egg bake for weekend breakfasts, harvest breakfast cookies (oatmeal, cranberry apple, walnuts) Dinner - Steak w mushrooms, (commercial) spinach souffle, B-size potatoes. Marie Helene’s apple cake (Dorie Greenspan)
Sat: Per sister’s request - Carryout (Pizza Hut) pizza, bag tossed salad with added sugar snap peas. Beer. Apple cake.
