Love this, and also all those dishes sound delicious!
Nothing terribly exciting. Just a fried rice (soy, ginger, garlic) with additional curry powder and sriracha. Makes it taste a little more like nasi goreng ayam, without using kecap manis ant chili peppers.

Hope you enjoyed the weekend, and that your week is off to a peaceful start.
I have been dithering about menu planning because nothing appealed much each time I went to the store. But then I decided to pick up a few things anyway, so hopefully that will boost my cooking mojo.
Ideas for the week:
– Salmon burgers from NYT (I found salmon strips at the Korean store and it was the first thing that had appealed in days). Maybe I’ll add some red curry paste or gochujang to the mixture.
–  Garlic butter sheet pan salmon and asparagus (haricots vert) from COTM Teigen
– Salads I am still craving – roasted squash and arugula, fennel and citrus, Russian beet vinegret
– Still not feeling the soups but if I keep them on the list maybe they will motivate me: – Curried Carrot, Lentil Coconut, or Mushroom.
– Mushroom japchae + tbd protein
– Cumin lamb (with a Dongbei or Xinjiang Chinese flavor profile) + quinoa/rice + veg

Greetings, People.
The last WMP of October. Halloween is tomorrow, which means Christmas-light-testing begins the day after tomorrow. My job is to stay out of the way (there will be cursing).
Cooking for two adults in the PNW.
FRI: Bangers & mash. Baby garden peas from the freezer.
SAT: White-fish tacos on corn tortillas. Avocado. Cabbage slaw.
SUN: Pasta with bacon and kale.
MON: Kansas City Steak Soup (with thanks to @bbqboy for the reference). Ciabatta rolls.
TUE: Fried rice with eggs, scallions, and bay shrimp (with a nod to @Mr_Happy for making me want fried rice).
WED: Salmon Caesar.
THUR: I ran across a reference for chicken, pesto, and cheese sandwich from Panera. I think I was at a Panera once, many, many years ago. Will try and recreate this at home on ciabatta rolls, and serve it with homemade tomato-basil soup.
Salmon caesar is my favourite salad! I was going through my recipe file last weekend and came across the recipe I printed out from skinnytaste and reminisced about making it last summer… When the volume of veggies in my fridge reduces I hope to buy some romaine and make it again. Cooking for 3 in southwestern Ontario.
One DC is on a strict diet, so that’s making my plan more simple, in terms of plainer dishes and less one pot or casserole dinners.
It also drains my creativity a bit. I think I might be a bit burnt out, as well.
I’ll hit the grocery store later today. I’m currently down to some Boston lettuce and half an onion in the crisper. LOL
Thursday: probably Mac and Cheese, chicken for the dieting DC. Hopefully I will be inspired to make an interesting salad.
Friday, I think I’ll make this jewelled salmon, with rice . I swap clementines for oranges. My new phone thought I would swipe clementines for cormorants.
Saturday, steak and potatoes.
Sunday, maybe take-out. You can see my lack of inspiration!
I never get tired of salmon Caesars, or almost any Caesar for that matter. Last night we had a spicy Cajun chicken Caesar - good stuff!
