Hi everyone
It seems harder and harder to find ways to stay positive these days, but food is usually a reliable distraction, so I’m all about comfort food at the moment. Baking myself some bread after a very long time. Trying to find peace and pleasure in small things.
Things that sound good to me right now:
— Chicken & rice / Yakhni Pulao (with my chicken stock)
— Zucchini scarpaccia / flatbread from COTM Diana Henry with some soup (maybe lentil, I’ve been missing legumes)
— Masala pot roast with freshly-baked crusty bread
— King oyster/ trumpet mushrooms — either copycat of a Malaysian restaurant dish with aromatics, soy sauce, and curry leaves, or yakitori-style with tare sauce
— Shortcut Gozleme / spinach & cheese quesadillas
— Homemade pizza (from extra bread dough)
— Pork jowl (that I found in the freezer) Thai-style (like this or this) + addictive garlic cabbage OR cabbage colcannon from COTM Diana Henry OR Skillet potato gratin from COTM Samin Nosrat
