Condolences, @MunchkinRedux. The jam is such a lovely and tangible tribute.
Thank you, all!
My father loved strawberries. He grew them as far back as I can remember. His tradition (and variety of berries) is one of many things I gained from knowing him. Strawberries from our garden were the last dish I shared with him.
My condolences. The strawberry jam is a suck a lovely memorial, and I imagine that each batch you make in the future will be a sweet reminder of him.
I’m sorry for your loss. Thanks for sharing.
Obviously, that should read such, not suck! It does the opposite of suck.
I knew that!
My sympathies for your loss.
Hi, all! Cooking for 1-2 in the Paris suburbs. Last week in France, and while I love it here, I’m also ready to be back in my house…Plans for the week:
Sunday, July 7: Frogs and toads in a hole (basically a strata) featuring the bread I baked today, succotash salad, strawberry tart
Monday: Out with my daughter for my birthday
Tuesday: Office day, leftovers at night
Wednesday: DH probably returns, pork stir-fry, possibly pudding to use up the excess milk my FIL bought
Thursday: Chicken thighs with garlic-lime sauce, potatoes, any veg that needs using up
Friday: Airplane home!
Have a good week, stay cool, and happy cooking!
I’m so sorry to hear this MunchkinR. Big hugs and condolences.
Happy Birthday, @mbcraw4d
I’m now in the home stretch of a two week staycation. I squeezed in another movie and a museum visit this week. I also headed out to the west end yesterday to shop at a couple of grocery stores we don’t have downtown and also to tie in a trip to Costco. I think I got overheated yesterday from all that walking outdoors. I should have brought more bottled water with me instead of just the one that I had in my knapsack. Today I will stay at home to do meal prep for next week and to do laundry. I will also spend some quality time with my air conditioner. My menus from actuals from yesterday to planned through next Thursday are as follows:
Yesterday: West end shopping trip. I stopped for lunch at what used to be a favourite diner. I ordered a lunch special (split pea soup, hot turkey sandwich and rice pudding) but the soup was too watery and the restaurant isn’t as clean as it used to be. I am done with that place especially since there are so many nice dining options in the area. And I’m not sure if it’s just me but Costco seems to be selling a lot more processed foods now. Lots of ramen kits, souvlaki kits, etc. I tried two samples - one of the souvlaki kits they are now carrying and some chicken strips. Both tasted like a salt lick. I drank a gallon of water when I got home then has some salami and blue cheese from the Italian grocer and a tomato from last week’s CSA. It was nice having some real food for dinner.
Today: fettuccine al pesto, asparagus on the side.
Sunday: Off to a Thai street food festival during the day then a salad for dinner.
Monday: First day back at work. Salmon kale salad.
Tuesday: Marinated kale salad (from “Simply Raw” by Natasha Kyssa).
Wednesday Chicken and couscous salad from the Cooking Light website. I don’t think the link works anymore. I loved that magazine
Thursday: Peanut butter noodles with cucumber from Bon Appétit.
Haapy belated 4th of July to my American friends and I hope those of you in the southern US are surviving the heat.
Happy birthday! Have a lovely time with your daughter!
We’re all under the heat in the US. Hoping we survive.
We’re retired, and a 2-person household. I don’t eat in the morning and DH is happy to reheat leftovers from our evening meals for breakfast. So it’s hard for me to contribute to the lists here. I admire the plans laid out in this topic and have discovered some great recipes.
Because we live in a crush of tourists in the summer, we do plan ahead for meals more than any other season. It’s not uncommon to go to the big or small grocery stores and find entire items completely wiped out. I always say “the locusts are descending”. So we rely on our pantry and freezer.
Tonight I’m making chicken enchiladas.
Tomorrow we’ll brave traffic and have lunch at our BYOB local clam shack. Then a repeat of the chicken enchiladas for supper.
Monday - I have leftover cooked steak in the freezer. If DH can find some bulky rolls we’ll have steak and cheese sandwiches. We tried that earlier in the week and there were no bulky rolls to be found.
Tuesday - There are pork chops and duck legs in the freezer, and bulk Italian sausage. We have options for egg noodles, orzo, rice, couscous. We have a good pantry of canned beans and tomatoes. The only thing we need to source are fresh vegetables and dairy/cheese. Our garden isn’t producing tomatoes yet (our only crop) but we have lots of herbs.
That’s as far as I’ve planned.
What better way to celebrate?! Hope you have a wonderful birthday.
My condolences.
Happy birthday!
Is this the Cooking Light salad you mentioned? https://www.myrecipes.com/recipe/chicken-couscous-salad
Yes! That’s it - thank you.
I find it amusing that the headnote cites “lots of brightly flavored herbs,” and the recipe calls for all of 1/4 cup chopped parsley in the way of herbs. (Otherwise, it does sound tasty.)
I just read it and just had the exact same thought! Weird.
