I’ve seen this technique on social media a ton of late! Some suggest draining off the liquid halfway, others skip that step. Did you need to drain the pan?
I remember when I made sheet pan chicken adana kebab and also tepsi (pan) kebab, that a bunch of liquid was exuded during bakimg, but miraculously reabsorbed after a short rest.
