Weekly Menu Planning - April 2022

I think it was a mixture of dehydration and low blood pressure. If it happens again I will definitely call my doctor.

That’s actually a brilliant work-around. I don’t think they offer private daily lessons at my pools, but I’ll look into it. Lane sharing is not that much fun. Hoping that going slightly later in the morning will help.

Thank you all for the kind words for Lulu!

Yes, she’ll be working at the cooking camp this summer, and probably a week or maybe two at debate camp. We had to be very firm about saving two weeks for a family vacation.

Actuals for the final week in April, cooking for 2 in MN where it seems like we’ve not seen sunshine in weeks. My chives are growing nicely (some harvested for garnish this week) and the rhubarb is leafing out enough to be visible from the kitchen window (countdown - 20 days until first cake of the season).

Mon: Oven beef stew, savory Bundt dinner rolls, Dessert - chocolate cake w vanilla ice cream. Portions of Stew were reheated for lunches all week.
Tues: Orange chicken over rice, devilled egg, fresh fruit salad (red grapes, strawberries, apple, mango) NOTE – online Julia Pacheco recipe has typo in cornstarch amount for sauce, 3 tsp or 1 T
Wed & Thurs: Chicken, asparagus and pesto tortellini with sun-dried tomato
inspired by this Julia Pacheco recipe - half recipe, shredded rotisserie chicken, microwaved the fresh asparagus. English muffins beside. Desserts– chocolate cake with chocolate/caramel ice cream, Strawberries with lemon cake.
Fri: Salmon, black bean/ rotel / brown rice, fresh asparagus with hollandaise sauce
Sat: Pork tenderloin, sweet potato, mixed vegetables with Spring Chive Oil (COTM – the New Midwestern Table). Dessert – No Bake Pineapple Layer Dessert, Julia Pacheco recipe
Sun: Sheetpan fajita meat/peppers from From Sheet Pan Suppers – Molly Gilbert, in hardshell tacos, Spanish rice (a Homesick Texan recipe)

Thanks for posting the link to Ottolenghi’s avgolemono soup, Madrid! A delicious, hearty soup, definitely worth the effort (sometimes Ottolenghi’s recipes seem needlessly fussy). Had it for dinner last night, accompanied by spanakopita. We’ll enjoy it again today, along with a Greek salad. Opah!

I am absolutely petrified of interacting with people while exercising. Many years ago I insisted that we change gyms when I ran into some of the supervising doctors from my hospital at the Y. Now I exercise in the privacy of my basement and totally resent it when my family come downstairs during my workout!

Congrats to Lulu! And I hope you do not have a repeat of the fainting.
