Using "fresh" garlic

Pretty much any time I make rice or mashed potatoes, I thinly slice the garlic the long way , then boil. It turns so beautifully mild and tasty, love it every time. When I make fresh tortillas, then fry as chips, the only salsa I make is: diced tomatoes, fine chop garlic, lime juice and cilantro. The fresh chips make the snack, but people always comment on the salsa, too. I’ll also eat some garlic cloves before I go to cut wood. Skeeters love me; but love me less when that sweat’s coming out of my pores.
