Has anyone made this? I’m starting to face facts that the majority of my figs won’t ripen in time. I found several recipes for unripe fig jam online but they all call for cloves which I despise. Wondering if anyone has ever made this or thoughts on a decent whole spice to substitute? I’m thinking cinnamon stick.
I would soak them in apple cider and rum, then cook them down for ice cream topping. Vanilla ice cream.

A riff on this sauce. I’d add small diced figs to this and cook them down for the ice cream.
My sister recommended making a simple syrup with the figs. Poaching will bring out the sweetness.
